This is one of my favorite techniques for juicy, tender chicken every time.
Place the chicken in a pot with cold water, salt, and your favorite spices in this case I used ginger, black pepper corns and lemon grass. Slowly bring it almost to a boil, then turn off the heat, cover, and let it cook in the residual warmth.
No aggressive boiling, no dryness, just soft, flavorful chicken that melts in your mouth.

Brown butter & pumpkin Bundt cake
1 cup pumpkin purée (about 250 g)
¾ cup browned butter at room temp'
¾ cup maple syrup
3 eggs
1½ cups flour
½ cup almond flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp cinnamon
½ tsp ground ginger
¼ tsp nutmeg
Cream Cheese Frosting
200 g cream cheese
2 tbsp butter, softened
⅓ cup powdered sugar
½ tsp lemon zest
1 tbsp lemon juice
