I can’t recommend this locals izakaya enough, chef Takuro Sueyasu made our night and the food was unreal. If your planning a trip to fukuoka be sure to book ahead (a month in advance).

These never last a day when I make them. They’re inspired by the moon macadamias you get at scoop! Sooo addictive and roasting the macas in honey just really elevates it.
Ingredients - white chocolate, coconut oil, honey, cane sugar and matcha
1. Coat macadamias in honey, I usually do it in a saucepan on low heat so the honey warms up and evenly coats the macadamias.
2. Transfer to baking tray and roast them in the oven until golden brown on 160 degrees Celsius. When you remove them from the oven sprinkle the cane sugar on top straight away. Let them cool.
3. Melt down chocolate in a heat proof bowl on top of a saucepan on low to medium heat. Add no more than 1 tsp of coconut oil.
4. Coat macadamias with chocolate then let them set in the fridge for at least an hour.
5. Enjoy as is or I like to dust them with extra matcha powder!
I first tried Sakura mochi 3 years ago at Nishiki market in Kyoto!! It was Taku’s childhood favourite. Now everytime I’m in Japan I am always trying to find them. They’re usually seasonal around spring during Sakura season but I’ve found them during winter and summer too! If you’re in Japan you must try it. It’s not super sweet, and has a slight salty flavour from the pickled sakura leaf that balances well with the floral flavour.

A few things before you make it: black sesame paste can be hard to find at your regular supermarket. Head to a japanese or asian grocery store. and please don’t sub black tahini, it’s too runny and oily and your chocolate won’t set properly. you need a thicker, drier paste 🙏

First time making black sesame tofu and it turned out so good! The pickled sakura leaf wrapped around rice was so delicious, it reminded me of sakura mochi ☺️
