We enjoyed ten courses of highly inventive cooking: a lovage-oil pumpkin soup to open, yellowfin tuna with fermented celeriac and Granny Smith apple, Orkney sourdough with the most extraordinary brown butter, Belhaven lobster smoked in cherry-wood whisky casks, and a perfectly pink slice of Hopetoun Estate venison with fermented blueberry jus. The pre-dessert (aerated chocolate, quince sorbet, cocoa nibs) and to finish, French toast, served with malted barley milk and a bread-based ice cream.
