So this year I promised Hadley that we would explore and do lots of little trips away, me and her. We live in South Wales but am willing to travel 2-3 hours for these trips!! Simple steps to a no bake biscoff cheesecake!π¨βπ³π°
.
Recipe:
.
Base -
- 300g of lotus biscoff biscuits ( I used a mix of the normal ones and a mix of the ones with the cream in )
- 150g of unsalted butter or use clover to make the base that bit softer.
( Crush biscuits, melt the butter, mix together to make base! Add to cheesecake tin and spread to make an even base and put in fridge while making filling )

Filling - whist together ( electric whisk )
- 500g full fat cream cheese
- 120g of icing sugar
- 1sp vanilla extract
- 200-250g biscoff spread ( depending on how sweet you want it )
Once whisked - add
300ml double cream, and whisk again until thick!

Add mix on top of base, spread evenly and put back in fridge overnight!!

Decorate -
- crushed Biscoff biscuits
- melt the Biscoff spread - drizzle on!

We had such a lovely afternoon at the beach yesterday. Itβs our favourite place to be, and I feel like we havenβt spent quality time together down the beach for ages! Hadley has an operation on Thursday for her tonsils and adenoids to be removed, so Iβm glad we have made the most of being outdoors and in the fresh air, as she may need a few days of cuddles and being all cosy indoors after!! I get serious cabin fever.... so this was needed!
