1 packet freezer section potato gems
1 Kg cleaned and de-bearded mussels
3 garlic cloves
1 shallot
2 red chilli’s
1tbsp tomato paste
1/2 cup white wine
1/3 tin chopped Italian tomatoes
Salt lemon and pepper to taste
Garnish with parsley and basil
1. Cook gems to packet instructions
2. Heat olive oil and add shallot and chilli, sauté until soft
2. Add tomato paste
3. Once it starts to caramelise add mussels, white wine and tinned tomatoes
4. Cook until mussels open
5. Season with salt and pepper to taste
6. Garnish with fresh parsley and basil leaves and a fresh squeeze of lemon
7. Pile up the potato gems and top with chilli garlic mussels

- 50ml extra virgin olive oil ($1.50)
- 1 brown onion ($0.80)
- 55g pitted olives ($1.80)
- 1 tbsp capers ($0.10)
- 175g cherry tomato medley ($3.25)
- 500g white fish fillets ($18.00)
- 500ml fish stock ($2.75)
- 400g baby Dutch cream potatoes ($3.00)
- Parsley for garnish ($1.00)
- Smoked NZ mussels (optional) ($9.00)
Sautee the onion, olives, capers and tomatoes in olive oil on low until softened
Peel and boil your potatoes until you can inert a knife easily
Add fish stock, potatoes and fish to the pan and simmer on low-medium until the fish is cooked through (flip fish towards the end)
You can check your fish is cooked by inserting a metal skewer, if you feel no resistance it’s done!
Add smoked mussels (optional) and garnish with parsley. Season with sea salt and cracked pepper to taste.

1 part soy sauce
1/2 brown onion
Sugar to taste
1. Combine sauce ingredients in your and cook on low-medium
2. Torch fish skin and slice to desired thickness
3. Garnish with the other half of the onion and top with the sauce
