1) Prepare marinade
1/2 tsp salt
2 red peppers
2 red chillies
1 tsp paprika
1 tbsp olive oil
1 top oregano
4 cloves garlic
Juice of one lemon
Handful of coriander
Blitz in a blender
2) Marinade 500g diced chicken
Leave for an hour
3) Cook in Air fryer for 20 minutes or shallow pan fry for 15 minutes.
Enjoy with rice or nan or in a focaccia sandwich!

I always used to think lamb chops were too much effort but then attempted them in my actifryer. Wow!!
I surprised myself. What I really liked about this was that:
1) they cook evenly
2) hardly used any oil
3) you can marinade and cook straight away
Ingredients
1kg front lamb chops
3 tbsp low fat yogurt
1 tsp chili powder
1 tsp chili flakes
1 tbsp tomato
2 tbsp chopped mint and coriander
1/2 tsp salt
1 tsp garam masala
1 tsp chaat masala (I use the Shan packet)
1 tbsp olive oil
Juice of one lemon
Method:
1) Mix well
2) Cook in actifryer for 10 minutes
3) Turn over
4) Cook for another 10 minutes in actifryer
Serve with roast potatoes.

These are just so delicious and super quick to make.
Method:
1) Boil baby potatoes until cooked but firm
2) In a large pan add a tsp of olive oil
3) Add two cloves of crushed garlic, salt pepper and chili flakes to taste.
4) Add a sprinkle of mixed herbs
5) Close the lid and give a gentle shake
6) Serve as a side dish or enjoy with salad
Tips:
1) You can add swap chilli flakes with paprika if you don't like chilli's
2) I sometimes use fresh coriander or basil instead of mixed herbs
3) you add a little tomato puree OR lemon juice for a slightly different flavour.

First of all apologies for not posting for a while. Lockdown has been both stressful and relaxing. Even though we have more time at home, I still don't want to be spending too much time in the kitchen!
My kids are not big fans of daal so these kebabs are great for using up any leftover daal. One of my children loves lamb mince and the other doesn't so I always have leftover mince.
I decided to put these two ingredients together in a food processor with a few more ingredients. See below for details.
ingredients:
2 cups cooked or boiled yellow lentils
2 cups cooked mince
1 tsp salt
Handful of chopped coriander
1 tsp garam masala
1/2 tsp turmeric
3 small green chillies or 1 tsp chili powder
1 egg
Method:
1) Whisk in a food processor
2) Remove from food processor
3) Shape into patties
4) Dip into beaten and egg and place in a greased large frying pan
Tips:
1) If the mixture is too wet to shape into patties, add mash potato flakes (dried packet)
2) You don't need hardly ANY oil to fry these. As the daal and mince are cooked, these don't take too long.
3) You can add an onion to the mixture but I didn't as my kids aren't too keen.
Enjoy in burger buns or as a side dish or with salad.

3) 2 tea bags
4) 4 open green cardamoms
5) pinch of black pepper
Method:
1) Add everything together in a saucepan and summer for 10 min
2) add small piece of grated ginger
3) Add 1 tbsp evaporated milk (optional)
4) simmer for 2 minutes
5) Serve piping hot
