But this is actually a one-year-old prosciutto.
During the aging process, beneficial molds grow on the surface of the ham. They help regulate moisture and protect the meat while it slowly transforms into prosciutto. Before we apply the sugna paste (a protective layer of lard and rice flour), we clean the surface so the next stage of aging can begin.
Making prosciutto isn’t just about salt and time. It’s a craft that takes years, patience, and understanding what’s supposed to happen along the way.
This is one of the processes we teach in our curing and charcuterie workshops at Hand Hewn Farm.

One of our favorite things about hosting these workshops is how the curriculum keeps evolving. Every class builds on the last—shaped by questions, curiosity, and feedback from students who return again and again. Each class offers the context to process their own or to support a local farm by buying direct, eliminating the reliance on third party butchering waste, stressful animal impact, limitations, expense, and timelines. This is not USDA cuts or waste… this is so much more.
This beef class actually started as an idea from one of our five-time returning students. We loved it… but it also meant a bigger walk-in cooler and another round of shop renovations. So we rolled up our sleeves and made it happen.
The class sold out quickly and we welcomed folks from Kansas, Florida, Virginia, Maryland, and Pennsylvania—most returning students (plus a few friends they convinced to join).
Friday started the right way with breakfast, introductions, and lots of coffee (nitro and hot), kombucha, and tea. Veggie quiche and French toast bake fueled the morning, along with some special treats from The Inn on Church Road, who took wonderful care of several of our guests while they were in town.
This class centers around a ½ beef from a local farm, and before a knife touches the carcass we spend time studying anatomy, fat cover, and muscle groups.
Day 1: Hind Quarter Breakdown
• Tenderloin & kidney fat removal
• Flank breakdown (for tomorrow’s fajitas)
• Sirloin & tri-tip separation
• Full sirloin breakdown
• Round breakdown
• Eye of round set aside for curing
• Merlot steak discovery
• Short ribs & navel separated
Lunch was beef chili and farm cornbread, and by the end of the day bones were roasting and fat rendering—nothing wasted.
