🥬 Giant Chicken Dolma 🔥 | Baked in Tomato Sauce

This time I made a giant dolma with chicken.

For the filling, I mixed minced chicken with rice, finely chopped onion, fresh greens, salt, and pepper. Simple ingredients, but full of comfort flavor.

I gently boiled the cabbage — not fully cooked, just enough to soften it and remove the leaves without tearing them. Then I layered several leaves on top of each other to create one large surface. Inside, I placed the chicken and rice mixture and rolled it into one massive dolma.

I baked it slowly, fully covered in tomato paste mixed with water, letting it cook on low heat until everything became tender, juicy, and perfectly balanced.

To finish, I made a fresh yogurt sauce with garlic, salt, and greens — cool, creamy, and aromatic. The warm tomato-baked dolma with the cold garlic yogurt created the perfect contrast.

Big. Juicy. Comforting. 🔥

Original Caesar Salad, But With 4 Cheeses 🥗 4-Cheese Caesar Salad 🧀🔥 | Bold & Creamy Upgrade

1. Mash anchovies, add capers, egg yolks, Worcestershire sauce, and mustard. Mix well. 🥄🧄
2. Add garlic, lemon juice, and olive oil. 🫒🧄🍋
3. Toss with lettuce, chicken, and croutons. 🥬🍗🍞
4. Top with Parmesan, blue cheese, mozzarella, and sulguni. 🧀🔥
5. Enjoy the REAL Caesar Salad! 😋

📖 Story Time

Caesar salad was always about balance — creamy, salty, fresh, and crunchy. But this time, I pushed it further with four cheeses.

The sharpness of blue cheese, the stretch of mozzarella, the salty depth of sulguni, and the classic finish of Parmesan create layers of flavor in every bite. It’s no longer just a salad — it becomes rich, bold, almost indulgent.

This is what happens when a classic meets creativity.
More cheese, more flavor… more satisfaction. 🧀🔥
Perfect Sous Vide Steak (My Way) 🔥 | 55°C Precision

This is my perfect steak — controlled, juicy, and full of flavor.

I took my favorite cut of beef, vacuum-sealed it with rosemary and garlic, and cooked it sous vide at 55°C for 3 hours. This guarantees the entire piece reaches the exact same temperature from edge to center.

After that, I finished it in a hot pan with butter, garlic, and rosemary — about 1 minute per side just to build that beautiful crust. Then I wrapped it in foil and let it rest for 10 minutes so all the juices stayed inside.

On the side:
🥔 Smooth mashed potatoes
🍄 Creamy mushrooms with cream, black pepper, and salt

When sliced — perfect color outside, tender and juicy inside. For me, it ended up around ~58–60°C final, which is exactly how I like it.

🌡️ Steak Doneness Guide (Beef – Core Temperature)

* Rare → 48–52°C (cool red center, very soft)
* Medium Rare → 52–56°C (warm red center, juicy) ✅ classic
* Medium → 56–60°C (pink center, balanced)
* Medium Well → 60–65°C (slightly pink, firmer)
* Well Done → 65°C+ (fully cooked, no pink)

👉 my steak:
55°C sous vide + sear → ~58–60°C final = Medium / Medium-Rare+

🥩 Quick Notes on Other Meats (Core Temps)

* Chicken → 72–75°C (fully safe, juicy if controlled)
* Duck breast → 54–58°C (pink, tender)
* Pork → 60–65°C (modern standard, slightly pink is OK)
* Lamb → 54–60°C (similar to beef, best medium-rare to medium)

📖 Story Time

Cooking steak used to be about guessing — fire, timing, experience. Sous vide changed that completely. Now it’s about precision. You decide the exact doneness, and the meat obeys.

But the magic still comes at the end — that quick sear in butter, garlic, and rosemary. That’s where science meets instinct.

For me, this is the perfect balance:
controlled inside, wild fire outside. 🔥🥩

🍜 Seafood Funchoza with Dried Squid 🦑🔥 | Sweet, Fresh & Crunchy

This time I made a bright, flavorful funchoza (glass noodle) dish with a seafood twist.

I started with dried sweet squid — soaked it in hot water until it became soft, juicy, almost like fresh again. Then I prepared the base: funchoza noodles, fresh cucumber, carrot, and sweet red (Bulgarian) pepper for crunch and color.

Everything went together in one bowl — noodles, vegetables, and tender squid. I added teriyaki sauce and sweet chili for that perfect balance of sweet, salty, and slightly spicy. Finished with black and white sesame seeds and fresh greens on top.

Light, vibrant, and full of texture — every bite is fresh, a little sweet, and full of ocean flavor. 🍜🌿✨

📖 Story Time

Funchoza is loved across Asia for its ability to absorb flavors while staying light and delicate. It’s a dish that adapts to whatever you have — meat, vegetables, or seafood.

Using dried squid is a clever street-food trick: simple, affordable, but full of taste. Once rehydrated, it brings a deep, slightly sweet seafood flavor that pairs perfectly with fresh vegetables and bold sauces.

It’s the kind of dish that feels quick and casual… but tastes like something much bigger. Sometimes the simplest ingredients create the most surprising results. 🦑🔥
French Fries Time-Test Experiment 🍟⏱🔥

Today I’m testing time, not just cooking.
I cooked the same fries for different times to see how texture and color change:
• Short time — soft inside, pale, barely crispy
• Medium time — golden, balanced, classic fry
• Long time — deep color, extra crispy, crunchy bite

Same potatoes, same oil — different results. A simple test that shows how timing makes all the difference. 🍟🔥

📖 Story Touch:
Before timers and digital thermometers, cooks learned fries by watching bubbles, listening to the oil, and trusting time. Small experiments like this are how perfect fries were discovered. Crispy or soft — every minute tells a different story in hot oil.

📖 Small Story Time:
The original Caesar salad was created almost 100 years ago by an Italian chef in Mexico, but over the years cooks added their own twists. One of the most flavorful versions came from countryside kitchens, where leftover smoked chicken was mixed in for extra depth and aroma. The smoky meat, creamy dressing, and crunchy lettuce created a dish that tasted like a perfect balance of old tradition and new creativity. Today, that same rustic twist turns a simple salad into a rich, satisfying classic. 🔥🥗🌿
