One of my all-time favourite comfort meals. Soft, fluffy pillows of ricotta and spinach that are packed with flavour, surprisingly simple to make, and perfect for when you want something that feels special without much effort.
I make mine with, one of my favourite fridge staples. It’s naturally high in protein, full of rich, nutty flavour, and takes this dish to the next level.
• Fresh wilted spinach
• Ricotta
• Grated Grana Padano
• 1 egg
• Fresh basil
• Zest of ½ a lemon
• Pinch of salt
Mix everything together, roll into small balls, lightly coat in flour, then cook in a saucepan of gently boiling water until they float to the surface. Serve with your favourite tomato sauce, plenty of extra Grana Padano, and fresh basil.

Ingredients:
1 pound ground chicken
2 slices rustic bread, torn into small pieces
1/3 cup milk
1 egg
1 cup finely grated Grana Padano PDO, plus more for finishing
1 teaspoon kosher salt
1 teaspoon freshly cracked black pepper, plus more for finishing
Olive oil, for cooking
For lemon and Grana Padano PDO Sauce:
1/2 cup white wine
1 1/2 cups chicken stock
1/2 cup heavy cream
2 cups finely grated Grana Padano PDO
Zest of 1 lemon
Juice of 1/2 lemon, plus more to taste
Freshly cracked black pepper
Place the torn bread in a bowl and pour over the milk. Let sit until softened. In a large bowl, combine the ground chicken, soaked bread, eggs, grated Grana Padano PDO, salt, and black pepper. Mix until just combined. Form into small bite-sized meatballs.
Heat olive oil in large skillets over medium heat. Cook the meatballs until browned on all sides and fully cooked through.
For the sauce, add the white wine to a saucepan and reduce slightly. Add the chicken stock and cream and bring to a gentle simmer. Lower the heat and gradually whisk in the Grana Padano until smooth. Stir in the lemon zest, lemon juice, and black pepper.
Spoon a small amount of sauce onto each plate or tasting spoon and top with a meatball. Finish with additional grated Grana Padano and cracked black pepper. Serve warm.
