Insieme al prepareremo la passata di pomodoro seguendo tutte le fasi del processo: dalla raccolta dei pomodori all’imbottigliamento.
In prima mattinata ci divideremo i compiti, lavoreremo insieme e condivideremo un gesto che da generazioni accompagna la fine dell’estate. Al termine dell’attività faremo colazione insieme e ogni partecipante porterà a casa la propria bottiglia di passata.

Sono il frutto di una fecondazione avvenuta grazie al vento, che può trasportare il polline leggerissimo anche per diversi chilometri.
Parte di queste nuove olive a sua volta cadrà: solo in estate, con l’indurimento del nocciolo, potremo sapere quanti frutti sono rimasti sulla pianta.
La strada è ancora lunga e da adesso è importantissimo monitorare e difendere gli ulivi fino al momento della raccolta.

Ogni varietà di olive è diversa dalle altre, matura in modo diverso e offre un olio con caratteristiche proprie.
Quindi bisogna conoscerle bene, sia per prendersene cura durante l’anno, sia per creare oli che ne valorizzino le qualità.
Queste olive sono state raccolte l’11 e il 12 settembre e descrivono una situazione generale: sono in ottima salute ma piuttosto piccole. Il caldo estivo ha limitato molto la mosca olearia, ma l’assenza di piogge fin dall’inverno ha frenato l’accrescimento e la maturazione.
Aspettiamo qualche giorno di pioggia e da fine settembre, con alcune varietà, inizieremo a fare oli spaziali!
Valorizziamo uno scarto di lavorazione, il nocciolino, utilizzandolo per riscaldare tutto il frantoio.
La sansa (altro scarto) trova un suo impiego in un biodigestore per la produzione di biogas.
Un passo alla volta cerchiamo di migliorarci, ma siamo consapevoli che bisogna accelerare e fare di più. È tempo di correre nella direzione giusta.
