Tokyo pizza has landed in Sydney. The Japanese pizzas of Pizza Studio Tamaki are influenced by Neapolitan classics and feature a 30-hour fermented dough baked extra-hot at 480-500 degrees for a beautiful leopard-spotted crust. The lunch menu runs three pizzas - I ordered the Tamaki and the Bismarck (Arrabiata is the other option).

The Tamaki brings smoked mozzarella, pecorino romano, basil, and cherry tomatoes that you crush at the table - bright, familiar, and a pretty solid pizza. The addition of Okinawan salt on both pizzas is unique to PST, although some parts of the base were a bit heavy-handed. The white-base Bismarck goes the other way: mozzarella, mushroom, the most delicious house-made pork sausage, and a runny egg cracked on top. Very nice 🍕

Beautiful caramelisation and intensely marbled with a cleaner flavour from the Japanese-style, barley-fed beef. Fellow Queenslander was the perfect person to assist in tackling this big charcoal-grilled steak. One of many great plates from The Rocks location of one of Sydney’s longstanding neighbourhood Italian restaurants.
A dreamy Italian long lunch 🇮🇹
The greatest pork I have eaten is the Char Siu from Sun Kwai Heung in Hong Kong. Expert Cantonese BBQ pork, made with the freshest pork collar, and cooked over a traditional open fire. Caramelised with a dry rub of salt, sugar, Chinese five spice, and other secret ingredients. Roasted until smoky and sweet, and drowned in a sticky maltose glaze which drips off like stalactites in the shop window. The half lean meat/half fatty cut is perfect.

Suckling pig is also popular here. There’s only two tables (six chairs) and usually a line and I got lucky arriving at 9.30am on a Sunday. Well worth the 40-minute journey from Central and an ideal fuel stop before the nearby Dragon’s Back scenic trail.

(1,2) - A Gothic Quarter bar serving the same classic tapas since 1945. Eat the pescaditos fritos (fried fish) like a packet of chips and bowl over as many glasses of the house-made vermouth as you can.

(3,4,5,6,7) - The most iconic Catalan tapas in the city comes from this century-old cava bar. I loved everything I tried - the calamari with sanfaina, baby clams, grilled pork neck with Padróns, and chocolate truffles with EVOO and sea salt to finish.

(8,9,10) - Fried Spanish sausages, hamburgers with Roquefort and pickles, and 3 euro pink cava. A proper Barcelona baptism.

(11,12,13,14,15) - Hidden in Barceloneta since 1944, this old-school tavern is where the iconic bomba was born (it’s a superb potato croquette with spicy red sauce). LCF is also the perfect place for a seafood breakfast of grilled squid, sardines, red prawns - they’re open from 9am.

(16,17) - Superb artisan pastries. The cinnamon twist is light and toasty, and that deceptively simple plain croissant is perfect - unexpectedly, one of the greatest I’ve had anywhere.

(18,19,20) - A back-alley dining room featuring the finest jewels of the Mediterranean Sea. Marennes-Oléron oysters, Galician live clams, Catalonian red prawns, and an incredible tortilla layered with goose barnacles, red prawns, lardo and caviar are my top picks.
