This is a very traditional stew made with onion, garlic, sweet peppers, tomato, basil, and annatto.
And of course, you can’t skip the plantains and rice (there wasn’t any coconut rice left because the island wasn’t prepared for such a huge group of us there for the wedding!) but UFFF.

And I’m also in this magical place showing my children that their mom is adventurous, that she prioritizes herself, that she can be fully happy even when she’s not with them, and that no one else is responsible for her happiness because it already lives within her.
Motherhood comes with so much guilt, but over the years I’ve slowly let go of it. It may sound cliché, but it’s so true: when we are whole and well within ourselves, our children are more than okay too. And we stop placing emotional burdens on them that they were never meant to carry.
Thank you, my babies, for choosing me for this role that I enjoy SO much… even while I complain about it sometimes 😂 the beautiful duality of motherhood. Thank you for making my life endlessly interesting and fun, and for teaching me every single day what lives inside of me.

Preparación
Cortar en rodajas la cebolla y el plátano maduro.
En una sartén caliente agregar el aceite de oliva, la cebolla, el
plátano, sal y pimienta.
Tapar y revolver con cuidado para no romper el plátano.
* ��Está listo cuando la cebolla esté suave y el plátano dorado.
- ��Batir los huevos con pimentón, sal, pimienta y comino.
- ��Agregar 2 cdas de la mezcla de cebolla y plátano en moldes para muffin. Verter los huevos batidos.
- ��Hornear a 350 °F (175 °C) durante 15 minutos.

This Caribbean-inspired, made-from-the-heart version swaps the traditional potato for ripe sweet plantain, adds little touches of cumin and paprika to the eggs, and pairs perfectly with a little ensaladilla I can share the recipe for if you want it (comment below!). 🤍
Makes 8 muffin-size tortillas:
Preparation:
* Slice the onion and ripe plantain.
* In a hot pan, add olive oil, onion, plantain, salt, and pepper.
* Cover and stir gently so the plantain doesn’t break apart.
* It’s ready when the onion is soft and the plantain is golden.
* Whisk the eggs with paprika, salt, pepper, and cumin.
* Add 2 tbsp of the onion and plantain mixture into muffin molds, then pour in the beaten eggs.
* Bake at 350°F (175°C) for 15 minutes.
Honestly… I don’t know if they’re even better than the traditional version hehe, but I think YESSS. 😌

That same “mother” that gives life is what sustains that sea of olive trees in Andalucía, Spain—home to these 100-year-old trees, where the season’s first olives are harvested to create this very special oil from: “Extra Virgin Olive Oil from Centennial Groves.”
A place where tradition and heritage have been passed down from generation to generation. I love the sustainability of these centennial groves and the community that supports them.

1. Sopa de calabaza/ zapallo (#pumpkinffth) o de zanahoria, de coliflor, de tomate con uno de estos vegetales más cebolla y ajo horneado. Licua con caldo o leche de coco y uffff.
2. Ensalda de remolacha con remolacha, zanahoria y cebolla en cubitos iguales. Después de horneados sazone con mayonesa / yogurt griego, los verdes de la zanahoria (o perejil) y un maíz asado que tenia en la nevera.
3. Flautas con coles de Bruselas, champiñones y cebolla horneada. Solo mezclas vegetales horneados con queso, enrollas tortilla y pones a tostar.
4. Con esos vegetales también horneados puedes hacer una frittata / tortilla de huevo espectacular!
5. Baba ghanoush o dip de berenjena con la berenjena horneada, tahini, aceite de oliva, limon, sal, limon encurtido.
6. Zanahorias horneadas servidas con yogurt y con pesto de lo verde de las mismas zanahorias!!

Just batch roast veggies and use for soup, sauces, dips, to eat with rice or tacos, you name it! Olive, avocado or coconut oil, salt, pepper and other spices if desired (I like paprika). Bake at 400F for 30-35 min. These are some ideas:
1. Butternut squash soup just blending it with roasted garlic and onion. Think changing squash for carrots, tomato, cauliflower. Blend with broth to coconut milk! UFF. (Continue in comments🙏🙌)
