Cozy days are for staying in and leaning into my favorite hobbies, today it’s baking this orange cake 🍊
Orange Loaf Cake
Ingredients:
Wet:
1/2cup Milk + Juice of half Lemon
3/4cup Sugar
2tbsp Orange Zest
1tsp Vanilla Extract
1/3 cup olive oil
50ml Orange Juice (freshly squeezed)
Dry:
1cup Sooji
1/4 cup Custard powder
1/4 cup milk powder
1tsp Baking Powder
1/4tsp Baking Soda
Add ins:
1/4cup tootifrutti ( or more,as desired)
Glaze:
• ½ cup icing sugar
• 2 tbsp orange juice
Method:
1. Preheat oven to 350°F (175°C) and grease a baking tin.
2. Combine the dry ingredients in a bowl and set aside.
3. Mix milk and lemon juice, set aside 5 minutes to curdle — this is your homemade buttermilk.
4. In a large bowl, rub sugar and orange zest together until fragrant. Add vanilla, oil, and orange juice, then whisk in the buttermilk until smooth.
5. Fold in the dry ingredients gently until just combined.
6. Pour the batter into the prepared tin and bake 45–50 minutes, or until a skewer comes out clean.
7. Let the cake cool completely. Mix icing sugar and orange juice for the glaze and drizzle over the cake.
