INGREDIENTS:
• 100g cold unsalted butter, cubed
• 80g caster sugar
• 65g light brown sugar
• 85g very ripe mashed banana
• 1 egg
• 1 tsp vanilla extract
• 250g plain flour
• 1/2 tsp cinnamon (optional)
• 1/2 tsp instant coffee powder (optional)
• 1/2 tsp baking powder
• 1/4 tsp salt
• 1/4 tsp baking soda
• 150g chocolate chunks or choc chips
METHOD:
In a bowl, whisk the cold cubed butter until slightly creamy.
Add both sugars and whisk until fluffy and combined.
Add egg, vanilla and mashed banana. Mix well.
Add flour, baking powder, baking soda, salt, cinnamon and coffee powder. Mix until just combined - don’t overmix.
Fold through choc chunks.
Roll into cookie dough balls and freeze for at least 1 hour (or overnight for best results).
Bake at 175–180°C for 10–15 mins until golden around the edges but still soft in the middle.
Let cool slightly so they set:)
Optional: top with extra choc and banana slices for the aesthetic ✨

Okay but Sunnybank seriously has some of the BEST Japanese food in Brisbane 🤤🍱 We finally tried Yori Japanese Restaurant and everything was SO delicious.
The tempura donburi bowl was definitely the star of the show with crispy prawns, eggplant and even a tempura egg that was still soft and gooey inside 😍 The udon was super comforting, the sashimi salad was fresh and light, and the chicken nanban was crispy.
Plus they do unlimited miso soup and sides which makes this such good value for money 👏

If you’re looking for one of the best sushi train restaurants in Brisbane, you need to check out Momoto at Garden City. Such a cool Japanese restaurant with an amazing fit out, fresh sashimi, delicious sushi rolls and so many unique plates going around the train. The salmon sashimi was incredibly fresh and soft, the aburi salmon was definitely a standout, and everything tasted so high quality.
Perfect spot for sushi lovers in Brisbane, date night ideas, casual dinners, or a food spot to try in Mt Gravatt. Definitely adding this to my favourite Brisbane sushi spots 🍣✨

Starting strong at Sarni and honestly… this place never misses. We tried the weekend special sandwich and it was SO good 🤤 Fresh ingredients, packed with flavour, perfectly toasted and easily one of the best sandwiches in Brisbane.
Also had to grab the matcha and Vietnamese iced coffee, both were surprisingly amazing. The matcha was smooth and balanced, and the Vietnamese iced coffee was delish with a good sandwich.

We took on the Alcotraz Brisbane experience - orange jumpsuits, mugshots, prison cells and all. Instead of ordering drinks, you complete tasks to earn your cocktails (which makes it way more fun 👀).
What was included:
