Mix 200 g feta, 100 ml water, 1 el olijfolie en rasp van ½ citroen tot glad en romig.
Smeer de whipped feta uit op een schaal, leg de preien erop en finish met flink wat dukkah!

This is no longer just a side dish: buttery-soft, smoky oven-roasted leeks with creamy whipped feta and crunchy dukkah — you’re going to want to make this! I used my favorite herbs and spices from Euroma; they’re freeze-dried so the flavor, aroma, and color are perfectly preserved, and they come back to life when used as if they were just picked fresh.
Leeks:
Preheat the oven to 220°C (425°F). Wash 4–5 leeks (750 g / 1.6 lbs) thoroughly and roast them for about 30 minutes until completely charred black on the outside. Remove the outer blackened leaves — the inside will be deliciously soft.
Dukkah:
Toast 100 g almonds, 2 tbsp cumin and 1 tbsp sesame seeds briefly in a dry pan until fragrant. Roughly grind together with the tips of 1 star anise, 1 tbsp cinnamon, 1 tbsp coriander leaves, and ÂĽ tsp salt.
Whipped feta:
Blend 200 g feta, 100 ml water, 1 tbsp olive oil, and the zest of ½ a lemon until smooth and creamy.
Spread the whipped feta onto a serving plate, place the leeks on top, and finish with a generous amount of dukkah!
