Ingredients: • 2 cups raw rice
• 1 cup coconut cubes (+ extra for garnish)
• 1 litre milk
• Sugar (as per taste)
• ½ tsp cardamom powder
• 2 bay leaves
• A pinch of salt
• Ghee
• Cashews & raisins (kishmish)
• Banana leaves
Method:
1️⃣ Wash and soak the rice for a few hours.
2️⃣ Grind the soaked rice with coconut cubes and a pinch of salt to make a smooth batter.
3️⃣ Heat the milk in a pan.
4️⃣ Once the milk starts boiling, add sugar, cardamom powder, and bay leaves.
5️⃣ Let it boil for 2–3 minutes.
6️⃣ Add the rice-coconut batter to the milk gradually while stirring continuously.
7️⃣ Cook on a low flame for 4–5 minutes until the mixture thickens and comes together like a soft dough.
8️⃣ Turn off the flame and let the mixture cool slightly.
9️⃣ Grease a cake tin or pan with ghee.
🔟 Line it with banana leaves and brush a little more ghee on top.
1️⃣1️⃣ Pour the prepared batter into the tin and spread evenly.
1️⃣2️⃣ Garnish with coconut pieces, cashews, and raisins. Cover and bake for about 1 hour until beautifully roasted and aromatic.
