For the Duck: Trim any excess skin and score
Place skin-side down in a cold pan, heat over medium-high heat until starting to sizzle (2-3 mins)
Add thyme sprigs, then bake skin side down at 180°C for 8-10 mins (adjust for size, these took about 10mins)
Crisp skin further on hob if needed (1 min)
These reached an internal temperature of 50°C, then rested for 5 mins whilst I prepared the sauce and veg
For the Sauce: Warm 150g Sweet Apricot Barbecue sauce, stir in 100g cold unsalted butter to emulsify.
This sauce is ideal for duck or game, the sweetness works fantastically with game flavours
Serve over polenta or mash (mine was a bit dry—my bad) with veggies

A little lunchtime burger this week using a French influence. Something new
Seasoned the Rib Cap burger with Black magic charcoal rub.
Sweat down some banana shallot in oil and butter, adding the wild mushroom mix of porchini, chanterelle, and girolle, and bound it with Peruvian Chilli aioli.
Wilted down the wild rocket in some oil, seasoned and added creme fraiche.
All put together on Brioche with Gruyere cheese.

and after a recent trip to France, I may have smuggled back some very French Raclette — absolutely perfect for a full on cheese feast, melted down with pungent dill until rich, oozy and totally indulgent
I also brought back some beautiful white asparagus with me as I just can’t resist it
With the weather absolutely freezing, I wanted it charred hot and fast with no hanging around in the cold
The Raclette Potato Melt went on for a steady 45 minutes, and while it was cooling in my Pan FP25
I opened up the vents for a hot and fast cook with Black Magic Charcoal beef rub, I pre marinated a gorgeous onglet steak that I purchased from the superb quality
I doused the underside of the onglet with Wagyu Tallow, knowing the moment I turned it, it would ignite the fire beneath and give me that deep, aggressive char, exactly what I wanted when cooking onglet over Chilla Grilla charcoal. This charcoal just performs like a dream and delivers every single time I use it
Finished the onglet steak with charcoal melted Lone Star bone marrow, black truffle, salted pepper butter and more dill… because why not?
I’ve blown the new year diet in less than 2 weeks with no shame as life is for living
Steaming hot cheesy potatoes, tallow charred asparagus and black magic onglet making for the most delicious supper

Remembered I had some left over Beef Short rib in the freezer I had previously ran for 10 hours on the and also had some Ribcap Burgers in, this could be the only option.
The beef ribs were previously smoked over using Black Magic Rub so added a little more rub the the ribs caps for a real depth of flavour.
Lit my 22" and smashed the burger down, while the beef rib was in the sous vide. Made a caramelised onions using Worcestershire sauce, oyster sauce, black pepper, and a sprinkle of sugar.
Once the beef rib was heated, gave it a light seasoning, and mixed with black truffle oil. All put togerther on a Brioche with Gruyere cheese.
Stunning flavours, very pleased.
