3-HOUR CHOCOLATE FOCACCIA
4 cups (500g) all-purpose flour
1/4 cup (21g) cocoa powder
2 Tbsp (25g) granulated sugar
1 1/2 tsp instant yeast
3 tsp salt
460ml warm water
1/2 cup Filippo Berio’s Extra Light Taste Olive Oil
3oz semi-sweet chocolate
- In a large bowl, whisk ingredients together. Add warm water and use a flexible spatula to work it into a shaggy dough. Cover and let proof for 30 minutes.
- First stretch and fold: with wet hands, lift and stretch a corner of the dough and fold it over into the centre. Continue this all the way around, about 5-6 folds. Cover and let proof again for 30 minutes.
- Repeat the stretch and fold a second time, cover with plastic and let proof for another 45 minutes.
- Line a 9x13 pan with parchment paper, drizzle 2-3 Tbsp olive oil to coat the bottom of the pan.
- Sprinkle 2oz chocolate overtop of the dough, grab the dough at 3 and 9 o’clock, lift and place back into the bowl, turn the bowl 90 degrees and repeat again. Repeat once more. Transfer the dough to the prepared pan, give the top a light drizzle of olive oil, cover with plastic and let proof a last time for 60-90 minutes.
- Preheat oven to 425°F.
- Drizzle 1/4 cup olive oil on top of the dough, use your fingers to dimple the surface. Sprinkle with flaky salt and bake for 15 minutes. Rotate the pan, lower the heat to 400°F and bake for another 15 minutes. Remove the focaccia from the oven, top with remaining 1oz chocolate chips. Cool for at least 45 minutes before enjoying.
