๐ป๐๐๐๐ is Filipino dessert: a Fried Banana Spring Roll. ๐ฏ๐๐๐ ๐ฏ๐๐๐ is another Filipino Dessert: Shaved Ice with Evaporated Milk and tons of yummy toppings like sweet beans, jackfruit, coconut strings, and more. Today, weโre marrying the two!
INGREDIENTS
-Burro or Saba Bananas (cut in thirds, lengthwise)
-Tropics Pastry Wrappers/Balat ng Lumpia
-Tropics Ube Halaya (Purple Yam Jam)
-Tropics White Beans in Syrup
-Tropics Red Mung Beans in Syrup (Red Bean)
-Tropics Langka (Jackfruit), cut in strips
-Tropics Macapuno Strings (Coconut Strings)
-Small Bowl of water
-Vegetable Oil for Frying
DIRECTIONS
-Cut Bananas into thirds (if theyโre too thick, the lumpia wrapper will tear). Place banana near the end of the wrapper.
-Add Ube Halaya to a pastry bag or ziplock bag and cut the tip. Pipe enough Halaya along the length of banana piece
-Spread 1 Tbsp White Beans
-Spread 1/2 Tbsp Red Mung Beans
-Add 2 strips of Langka
-Spread 1 Tbsp Macapuno Strings
-Roll forward once, fold the sides in, then continue folding forward towards the opposite edge of the wrapper. Seal by dipping your finger into water and moistening the last edge. Dampening the edge will make it sticky and help seal the Turon!
-Hear Oil at Medium high, about an inch high. Fry Turon for 2-3 minutes on each side or until golden brown.

The way some kids from Chinese families were under scrutiny for how they folded dumplings, was how I felt rolling a lumpia/turon! Papa would examine how I rolled each one. The edges needed to be straight, it better be sealed tightly at the end, no air pockets. And if I accidentally tore a spot? OH MAN would I hear it! I was the apprentice of a tough teacher. Overtime, I could feel the settled of it, I can tell a good Lumpia/Turon simply by the feel. Nowadays, I donโt care as much for perfection, but itโs like I can still hear him in my ear anyway.

INGREDIENTS
โข 2 cups (250g) all-purpose flour
โข 2 teaspoons baking powder
โข 1/2 teaspoon baking soda
โข 1 teaspoon kosher salt
โข 1 stick (113g) unsalted butter, room temperature
โข 3/4 cup (150g) granulated sugar
โข 2 large eggs, room temperature
โข 3 very ripe bananas, mashed (about 360g; 1 1/2 cups)
โข 3/4 cup (190g) ube halaya
โข 1/4 cup (60g) whole milk
โข 1 1/2 teaspoons ube paste
INSTRUCTIONS
Preheat oven to 350 F (175 C). Grease a 9x5-inch (23x13-cm) loaf pan with nonstick spray and line with parchment paper so there is overhang on both long sides.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In the bowl of a stand mixer fitted with the paddle, add the butter and sugar. Beat on medium speed until light and fluffy, about 4 minutes. Beat in the eggs one at a time. Beat in the bananas.
Add the flour mixture in two additions, beating on low speed until mostly combined but not quite. Finish mixing with a rubber spatula.
In a medium bowl, whisk together the ube halaya, milk, and ube paste until smooth. Add 1 1/2 cups (360g) of the banana batter and fold until just combined. Do not overmix.
Add the batters, in alternating dollops, to the prepared pan (I usually do about 3 tablespoons per dollop).
Using a butter knife, swirl the batter to create a marbled pattern. Tap the pan firmly against the counter a few times.
Bake on a sheet pan until golden and a long skewer inserted into the center of the cake comes out clean, about 1 hour 25 minutes to 1 hour 35 minutes (a few sticky crumbs are okay). Cover loosely with foil for the last 30 minutes to prevent over-browning.
Transfer pan to a wire rack and let cool for 20 minutes. Remove bread from pan and set on rack. Let cool completely.

๐ Melon (Filipino Melon Drink)
In California, cantaloupes are available in supermarketsm starting in April. This drink is perfect for spring and summer. Seved over ice with bits of melon pieces, it is hard not to love. I remember this being made by either my mom, grandparents, titas/titos as a kid especially during those hot summer valley days that we spent swimming in my grandparents pool.
Iโve read that this is also called Melon sa Malamig; โsa malamigโ which refers to any type of cold drink that is meant to cool you off, but when I asked my Tita Mary about it she said sheโs only called it melon. In the Philippines, itโs commonly served in a plastic bag with a straw. You can also add vanilla extract or lemon/calamansi juice to add extra flavor.
In this reel I made two versions, one with and one without the addition of evaporated milk. The evaporated milk really gives it a creamy consistency and texture. Which version is your fav?
Ingredients:
1 medium ripe cantaloupe (mine was 4 lbs)
1/4+ cup sugar (to taste)
Water
1 can evaporated milk (optional)
Method:
1. Cut cantaloupe in half from stem to stem (long ways).
2. With a spoon remove seeds.
3. Shred cantaloupe flesh. I used a coconut meat scraper but if you donโt have one you can use a fork but using the coconut scraper is much easier and makes these beautiful ribbons! (I have one linked in my Amazon storefront)
4. Add coconut flesh to a pitcher.
5. If using evaporated milk add can to pitcher. If not using evaporated milk skip to step 6.
6. Top pitcher off with water.
7. Add sugar to taste and mix well.
8. Put in refrigerator for 30 minutes.
9. Serve cold with ice!
