- handful of enoki mushrooms
- handful of Chinese leaf
- handful of sliced fried tofu
- handful of sliced spring onions
- 1 tbsp sweet soy sauce
- 1 1/2 tsp chicken powder (the one I use is vegan… concerningly!)
- 1 tbsp miso paste
(Optional, add noodles)
Serve up with chilli oil, chives and sesame oil before digging in! 🥢

This Thai green curry inspired noodle soup might not be super authentic but it is super delicious… a big veganuary WIN 🏆
Ingredients for 2:
For the ‘paste’:
- Large thumb of ginger, chopped
- 2 garlic cloves, peeled
- Large stick of lemongrass
- 4 spring onions
- 1-2 Thai green chilli’s
- Large bunch of coriander
- Small bunch of Thai basil
- Juice of 1 lime
- Splash of water (as much or as little needed by your food processor/blender… mine needed quite a lot!)
For the broth:
- Thai green paste
- 400ml coconut milk
- 400ml vegetable stock
To serve:
- 2 portions of rice noodles, cooked to package instructions
- Your favourite veg, I used broccolini, sugar snap peas, beansprouts, spring onions and coriander
- Lime wedge
- Thai basil
- Chilli oil
Method:
- Add paste ingredients into a food processor and blend to form a smooth paste
- Add paste to a pan over a medium-high heat and cook for a couple of minutes until fragrant
- Stir through the coconut milk and stock and bring to a simmer
- Pour soup broth over noodles before topping up with vegetables and any other toppings you fancy
- ENJOY!!🌶️

Does your New Year’s resolution involve eating more plant based meals? 🌱
Aubergine katsu curry bao buns, makes 3 buns plus extra aubergine katsu:
For the aubergine:
- 1 aubergine cut into wedges
- Approx 120g plain flour
- Approx 120g cold water
- Approx 60g panko breadcrumbs
- Vegetable oil for frying
For the slaw:
- 2 spring onions, finely sliced
- 4 radishes, finely sliced
- 1 small carrot, finely grated
- A small bunch of coriander, finely chopped
- 1 tbsp toasted sesame seeds
- A pinch of salt
- A splash of rice wine vinegar
- A splash of sesame oil
- A splash of soy sauce
Other:
- 2 tbsp Vegan mayo mixed with 2 tbsp golden curry sauce ( I used a curry block to make it)
- 3 bao buns, steamed
- Pinch of Shichimi
- Handful of crispy shallots
Method:
- Make the slaw by simple mixing everything then set aside for later
- Heat oil in a pan over a medium-high heat, meanwhile whisk together flour and water
- Evenly coat aubergine in flour batter before coating in breadcrumbs
- Once the oil is hot (to test dip the end of a wooden chopstick in the oil, if bubbles form around it then you’re ready to fry), carefully add the aubergine in batches and fry for a couple of minutes until golden and cooked throughout. Remove and place on a kitchen roll lined plate to soak up any excess oil
- Serve by spread some of the curry mayo on each bun before loading up with the aubergine and slaw
- Finally sprinkle over Shichimi and crispy shallots… ENJOY 😋

Let’s be honest, we all knew it would be noodle soup! 🥣
Recipe🍜:
Stock:
-1 heaped tsp miso paste
-1 1/2 tbsp soy sauce
-1 tsp sesame oil
-1 tsp maple syrup
-1 tsp mirin
-1/2 tsp shichimi
-2 spring onions whites
-Boiling water to fill bowl
To serve:
-Portion of your favourite noodles
-Seaweed
-Silken tofu
-Spring onion greens
-Crispy onions
-Coriander
-Crispy chilli oil
-Toasted sesame seeds
Method:
-Cook noodles to packet instructions
-Whilst they’re boiling add Soy sauce, Sesame oil, Maple Syrup, Miso, Mirin, Shichimi and Spring onion whites to a bowl alongside a good splash of boiling water
-Mix thoroughly and cover for a minute
-Fill up with remain boiling water
-Stir through noodles and serve up with toppings
-SLURP AWAY😋

Nothing beats the winter blues quite like a noodle soup and this bibigo Korean Fried Chicken noodle soup certainly cures any comfort craving! 🍜
Getting ingredients to make this tasty recipe is easier than ever as they’ve officially launched in meaning, I managed to get all the ingredients for this drool worthy dish whilst doing my normal weekly shop… how good! 🛒
Recipe:
For the soup base:
-1 tbsp bibigo Hot Jang Korean Style Chili Sauce Sweet & Spicy
-3 sliced spring onions, use the whites in the base and the greens to top
-1 heaped tsp miso paste
-1 tsp soy sauce
-1/2 tsp sesame oil
-100ml warm plant milk
-200ml chicken stock
Additional ingredients:
-Portion of your favourite noodles cooked to packet instructions
-Portion of pan fried shiitake mushrooms
-Portion of sautéed Beansprouts
-Portion of bibigo Korean Style Fried Chicken Sweet & Spicy Sauce
-1 soft boiled egg
-3 finely sliced spring onion greens
-Small bunch of fresh coriander
-Drizzle of chilli oil
-Sprinkle of toasted sesame seeds
Method:
-Add chilli sauce, miso, soya sauce, spring onions, sesame oil and milk to a bowl and mix
-Stir through noodles and chicken stock
-Top with additional ingredients
