My soffritto Risoni w/ basil oil and ricotta
Ingredients
Soffritto sauce
- 1 carrot peeled and diced
- 1/2 brown onion diced
- 1 stick of celery diced
- 1 tin diced tomatoes
- olive oil
- sliced garlic
- chilli flakes
- salt & pepper
Basil oil
- basil leaves picked
- olive oil
Ricotta
Risoni
Method
1. Sauté celery, carrots and onion on a medium heat until onion starts to brown. Remove from head and strain oil with a sieve.
2. Return strained oil back into the pan and sauté garlic and chilli flakes for 2 minutes then add in tomatoes and cook for another 2 minutes. Then add back in the celery, carrots and onions. Reduce for 5 minutes and then season with salt and pepper. Blend all ingredients until smooth.
3. To make basil oil blend picked basil and olive oil, pour into a pot and bring to a medium heat and cook for 5 minutes. Strain basil and reserve oil.
4. Cook Risoni(can use any pasta you like)
5. Place sauce purée back into a pan. Add a little butter and some of the pasta cooking water. Stain pasta and toss though the sauce.
6. Serve with a big dollop of ricotta and a drizzle of the basil oil
