I’ve been getting requests for my favorite creamy pasta recipe and this is it! I think we all deserve to have food that makes us feel special and comforted. This pasta is the perfect balance of not spending your whole night cooking while still feeling like you made something beautiful for yourself.
Proof that you don’t need to over complicate dishes. Simple is beautiful. 🪄
🌱VEGAN
⏳TIME: 30 minutes
🍝SERVINGS: 4
INGREDIENTS
3 red bell peppers, quartered
1 Spanish onion, quartered
1 bulb garlic
Olive oil, as needed
Salt, to taste
Black pepper, to taste
2–3 tbsp nutritional yeast
1/3 cup plant milk or plant heavy cream
1/4–1/2 cup reserved pasta water
2-3 Calabrian chilies in oil, optional
Rigatoni pasta, 4 servings
12 oz Maitake mushrooms
Fresh basil, chopped
METHOD
1. Preheat oven to 425°F.
2. Toss the red peppers, onion, and garlic with olive oil, salt, and pepper. Spread onto a parchment-lined baking sheet.
3. Roast for 20–25 minutes, until softened and slightly charred.
4. Meanwhile, cook rigatoni pasta and sauté maitake mushrooms until golden and crispy.
5. Add the roasted vegetables to a blender along with nutritional yeast, plant milk or cream, Calabrian chilies (if using), and reserved pasta water. Blend until completely smooth and creamy.
6. Toss the pasta with the roasted red pepper sauce, maitake mushrooms, and fresh basil.

🌮METHOD
Mash some potatoes with vegan butter, salt, and nutritional yeast until creamy.
In a skillet, fry up some oyster mushrooms in a little oil with taco seasoning (I like chili powder, black pepper, salt, garlic powder, cumin, Mexican oregano, and a little paprika). Cook until the mushrooms are crispy, then fold them into the mashed potatoes.
Heat about 1/2 inch of oil in a skillet. Fill your taco shells with the mashed potato mixture, then fry until golden and crispy on both sides.
Serve with shredded lettuce and a little vegan sour cream.
