1 sheet pie dough
8-10 slices oranges (peeled, mixed)
1 egg (whisked for egg wash)
Filling:
1 cup mascarpone
1/4 cup orange marmalade
Instructions:
Preheat the oven to 400 °F
Combine the filling ingredients until smooth and set aside
Spread the pie dough onto a lined baking tray
Evenly spread the filling mix onto the pie dough end to end
Fold the ends of the filled pie dough 6 times approximately 1” wide
Arrange the sliced oranges on top of the filling, do not overlap
Brush the exposed pie dough with egg wash
Bake at 400 °F for 25 min
Let cool before serving and garnish with mint

Instructions
Whisk together all the ingredients except the beer and refrigerate for a minimum of 1hr.
Strain the mixture and refrigerate for up to 1 week.

4 grapefruits (hulled)
4 tsp rum extract
Whipped Cream:
1/2 cup heavy cream
3 tbsp confectioners sugar
Meringue:
4 egg whites
1 tsp corn starch
1/2 tsp cream of tartar
1/4 cup confectioners sugar (separated)
Instructions:
•Slice the grapefruit in halves and remove the flesh. Keep the bottom half of the hulled fruit to use as the fruit bowl
•Remove the pith from the flesh of the fruit and set aside
•Make whipped cream by whisking chilled heavy cream and 3 tbsp confectioners sugar until fluffy
•Make meringue by whisking egg whites, corn starch and cream of tartar at medium speed until the eggs are pale white. Then whip in the sugar in 2 parts. Whisk at medium speed until stiff peaks form
•Construct the Alaska:
•Add the grapefruit pulp into the hollowed out grapefruit bowls in equal parts (3/4 filled)
•Drizzle 1tsp of rum extract to each bowl
•Cover the pulp with whipped cream
•Cover the whipped cream with meringue (teasing to make spikes)
•Torch the meringue to toast and firm
Serve with mint and grapefruit zest as garnish #CitrusFest #RedGrapefruit
Marinade/Dressing Recipe:
1/2 cup navel orange juice
2 sprigs fresh oregano leaves
1 tsp red wine vinegar (or rice vinegar)
1 tbsp olive oil
1 small shallot (diced)
1/8 tsp salt
1/8 tsp black pepper
Instructions:
1) Combine all the ingredients and mix well
2) Split the mixture in 2 parts, 1/3 for meat marinade and 2/3 for dressing.
3) Using a blender, blend the ingredients until smooth.
4) Marinade the meat (we used wholesome pantry chicken thighs) in the leftover mixture for a minimum of 1hr.
5) Cook the chicken until it reaches an internal temperature of 165 °F
6) Dress the salad by massaging the dressing into the salad greens (we used kale)
7) Add cooked chicken, fresh sliced apples and finish with extra dressing for an extra kick
