A better look at what happens when you give pan loaves an extra 5-10 minutes in the oven after removing them from the tin. Probably not feasible in a bakery situation but perfectly doable at home. It gives the loaf a nice full shape, even after cooling (no sinking!) 🍞👏

Little garden update. Getting ready to plant some of my greens for the winter (aka the cool summer as opposed to the hot summer). That pineapple is going to be a monster! We’re developing quite a collection of them. It’s pretty nice to be able to enjoy the green space all year round 🌳
Part 2 - the final loaf. Pretty good! Definitely don’t skip that final 10 minutes out of the pan, if you can. It’s not the end of the world if you don’t, but your crumb will be lighter and your slices more fulsome if you do 😀

Getting it done. Major life recalibration going on here. Just about through it I think. Happy to be here, still baking, still making, using all my creative quick shortcuts! Done is far better than perfect IMO 😉 Must contact my homies soon for a run!

Now that the weather is cooling off, I’m all systems bread again! Yummo. Can’t wait to get back into some proper long form videos again. What are you baking lately? Anyone make HCB’s? I didn’t this year, but we are having buckwheat pancakes for brunch today! 🥞😋 #wholegrainsourdough #homebaker #homemilling #ellyseveryday
It’s breaky smoothie time. I make this most days in summer. Having a range of edible greens in your garden or a balcony pot can really enhance the nutritional in your everyday diet, without much fuss! I regularly pick Okinawa spinach, sweet leaf, longevity spinach, Ceylon spinach, sweet potato greens etc. In high summer Brisbane there isn’t much else that can survive the heat and pest pressure!

Sending love south. Thinking of my friends in Victoria, many members of the community, some who have lost their homes and important local infrastructure in the fires yesterday, which are continuing today. Others are gallant souls helping fight fires and supporting their communities in ways I can only imagine 🧡

Happy New Year, everyone! ✨

I’m kicking off the year by sharing a proper old favourite—because why does everything have to be brand new all the time? Sometimes the classics are exactly what we need.

This is my trusty Blender Hummus. It is an absolute staple in our house and was a total star during our camping trips in 2025! We have a tub of this in the fridge most weeks.

A huge thank you to for the tip to add pickled jalapeños. It is a total game changer!

I make this version without any added oil to keep the calorie density lower (I’m a big eater and I love a generous serving, lol). It is brilliant slathered on sourdough toast with avocado, perfect for dunking roast potatoes, or you can even thin it out to make a salad dressing. Get creative!

📝 Elly's Blender Hummus

Note: My tablespoons are big Aussie ones (20ml). If you’re using standard US tablespoons (15ml), just be generous with your scoops!

Ingredients:

1 can cooked chickpeas (rinsed and drained)

1 tbsp tahini

1 clove/tsp minced garlic

¼ tsp salt

Fresh cracked black pepper (or a good pinch of white pepper)

½ tsp ground cumin

3 slices of pickled jalapeño (These make it! Keep it to 3 or less if you prefer it mild, or add more for a kick)

3 tbsp lemon juice

4–5 tbsp water (start with less, just enough to get the blender moving)

Method: Chuck everything into a blender and whiz until super smooth! It starts out a little runny, but if you blend it thoroughly it gets lovely and thick.

It keeps happily in the fridge for about 5 days.

Hope you enjoy making this one yours. Get creative and have a wonderful week! 🌿

Refilling my little wheat tubs for the kitchen. Not essential to have a chest freezer, but very handy! Especially if you’re buying your whole grains and other produce in bulk. This is the lovely Foster wheat from the Murphys in Emerald, QLD (cleaned and put into an old Burrum Biodynamics bag 😊). There’s a big explainer video about all the ins and outs of this storage process on my YouTube channel if you’re keen to dive in further. I’m quite often diving head first into my freezer! 😆
I was gifted this lovely Foster wheat, grown here in Qld by the Murphy family. Apparently farmer Paul gave the bag to Thor from who gave it to me to have a go with milling and baking it at home.

This is about my third loaf with Foster, and it's lovely! A good solid performer for bread with classic whole wheat vibes.

I had to hand clean the grain as the bag came straight off the farm (most farms don't have the infrastructure to process their own grain, but I think that's changing these days). Needless to say I don't have the infrastructure either, but a bit of sifting, sorting and unskilled winnowing made it a little more presentable, and I'm quite comfortable with high fibre, so no dramas with a bit extra 😉
