Ingredients
* 2 packets Double Horse 2-Min Instant Idiyappam
* 250g chicken
* 2 onions sliced
* 1 tomato chopped
* 2 green chillies
* 1 tbsp ginger garlic paste
* ½ tsp turmeric powder
* 1 tsp chilli powder
* 1 tbsp biriyani masala
* Whole spices (bay leaf, cinnamon, cloves, cardamom)
* Curry leaves
* Coriander leaves
* Mint leaves
* Salt
* Oil + little ghee

Preparation
Step 1 — Prepare the Idiyappam
Prepare the instant idiyappam as per the packet instructions and keep aside.
Step 2 — Make the Tamil Nadu Style Masala
To a pan, add oil and a little ghee. Add whole spices and curry leaves.
Add sliced onions, green chillies, and ginger garlic paste. Sauté until golden brown.
Add tomatoes and cook until soft. Then add turmeric powder, chilli powder, salt, and biriyani masala. Mix well.
Add mint leaves and coriander leaves for the authentic Tamil Nadu biriyani flavour.
Add chicken and cook until perfectly done and coated well with the masala.
Step 3 — Combine
Add the prepared idiyappam into the masala and gently toss everything together without breaking the idiyappam too much.
Step 4 — Final Touch
Close the lid and cook on low flame for 2 minutes so the flavours blend beautifully.
