Per due motivi:
1. Perché si tende a non mostrare mai cosa accade davvero dentro i laboratori.
2. Perché quasi nessuno, in Italia, ha un controllo così completo della filiera: dal frutto crudo al gelato finito.
Quando parlo di Gelato Verace, fatto da zero con frutta vera, qualche detrattore sospetta che non sia così e che le cose che dico non corrispondano alla realtà.
Beh, non è così.
E l’unico modo che ho per dimostrartelo non sono le parole, ma i fatti.
Oggi ti porto con me dietro le quinte.
Ti porto nel nostro Marzalab, a scoprire come funziona un ciclo di produzione che parte dalla frutta cruda e arriva fino al prodotto finito.

Ma non è una cattiva notizia, anzi
È un rituale.
È la vera rappresentazione dello slow living siciliano estivo.
Una granita ca brioscia non la mangi come un croissant e un espresso, in piedi, stressato, veloce.
La degusti lentamente, prima pucciando il tuppo nella panna e poi premunendoti che ogni pezzettino di brioscia si inzuppi per bene nella granita e parimenti nella panna che deve essere rigorosamente 100% vaccina senza additivi e per questo montata espressa al momento.
Nella granita ca brioscia c’è tutta la differenza culturale tra la Sicilia e il resto del Mondo.
Palermo con i suoi monumenti, le sue strade, le sue piazze… e ora anche il gelato Don Peppinu.
Accomodati in prima fila, davanti al Teatro Massimo, con in mano il nostro gelato preparato solo con i migliori ingredienti che l'isola ha da offrire.

Fra i vicoletti di Modica Alta, più a sud del sud, mio nonno dava vita al Cono Flamingo.
Non era solo un cono. Era una scelta di vita.
Era la testardaggine siciliana di chi, invece di prendere la strada più comoda, decideva di costruirne una propria.
Quella tradizione noi non l’abbiamo rinnegata. L’abbiamo custodita e rinnovata, e, ancora oggi, produciamo quegli stessi coni dentro il nostro laboratorio.
Un laboratorio che, per me, è un luogo quasi sacro: forse l’unico al mondo dove puoi mangiare un cono appena sfornato, riempito con un gelato appena mantecato, fatto con nocciole tostate poco prima.
Quando parlo di veracità, parlo esattamente di questo.
Parlo della scelta di produrre in casa tutto ciò che possiamo.
Parlo del rispetto per la nostra terra e per i suoi agricoltori.
Anche quando costa di più.
Anche quando la fatica diventa cinque volte più grande.
Molti, forse, non se ne accorgeranno nemmeno.
Altri magari non riusciranno a capire fino in fondo la differenza.
Ma io sì.
E per me non esiste un altro modo di intendere il gelato.
Perché il mio gelato non nasce da una scorciatoia.

non tradire mai quello che siamo.
