Oil-free recipe
Makes 8 naans

INGREDIENTS

For the naan dough:

* 500g spelt flour
* 2 packs silken tofu (approx. 600g total)
* 1 tsp salt
* 1 tsp garlic powder
* 1 tsp ground coriander
* 1 tsp cumin
* 1 tsp nigella seeds
* 1 tsp turmeric
* 1 tsp baking powder
* 1/2 cup oat milk

For the potato filling:

* 2 medium potatoes, boiled and mashed
* 1 red onion, finely diced
* 3 garlic cloves, minced
* Small handful fresh coriander, chopped
* 1 tsp turmeric
* 1 tsp chilli powder
* 1 tsp cumin seeds
* 2 tsp garam masala
* Salt and pepper to taste

To serve:

* Chickpea curry
* Yoghurt
* Fresh coriander

METHOD

1. Blend the silken tofu until smooth.

2. In a bowl, combine the spelt flour, salt, garlic powder, ground coriander, cumin, nigella seeds, turmeric, and baking powder.

3. Add the blended tofu and oat milk. Mix into a soft dough and knead for 5 minutes until smooth. Cover and rest for 20 minutes.

4. In another bowl, mix the mashed potatoes with red onion, garlic, coriander, turmeric, chilli powder, cumin seeds, garam masala, salt, and pepper.

5. Divide the dough into 8 pieces. Fill each with the potato mixture, seal, and gently roll back out.

6. Cook in a non-stick pan over medium heat for 2–3 minutes on each side until golden and cooked through.

Serve with chickpea curry, yoghurt, and fresh coriander 🤍

We set off before sunrise to beat the Bank Holiday crowds, and honestly, Dorset felt completely ours for the day.
We wandered through the cutest little village before arriving at Lulworth Cove — turquoise water, dramatic cliffs, and even a sauna right on the beach, which made it feel surreal.

From there, we hiked along the coast to Man O’ War Beach and then finally reached Durdle Door, which somehow lived up to every expectation. The views were unreal.

After a quick rest, we headed back out for an evening hike to Worbarrow Bay, and on the way we even spotted a baby adder curled up beside the path.

By the end of the day, we’d swum in some of the most incredible beaches, walked miles of coastline, and somehow packed an entire holiday into one perfect day in Dorset.

Rainy, windy Tuesday calls for Thai Green Curry 🍛 🇹🇭

Here’s the recipe- save for later ☺️

🇹🇭 Thai Green Curry Paste (homemade)

Ingredients
2–4 green chillies or 1–2 tsp green chilli paste
2 cloves garlic
1 thumb ginger or galangal
1 stalk lemongrass or 1 tsp lemongrass paste
1 small red onion
1 tsp ground coriander
1 tsp cumin
1–2 tbsp soy sauce
Zest of 1 lime or a squeeze of lime juice
Small handful coriander stems if available
1–2 tbsp vegetable oil or coconut milk

Method
Roughly chop all ingredients. Blend or pound into a smooth paste, adding a little oil or water to help it combine. The paste should be thick, fragrant and spicy.

🇹🇭 Thai Green Curry with Tofu and Vegetables

Ingredients
Tofu, cubed
Cooked brown rice to serve
1 can coconut milk
2–4 tbsp green curry paste
Mango, diced
Runner beans
Baby corn
Carrots
Cauliflower
Broccoli
Red pepper
Green pepper
Red onion
Oil for frying

Method
Pan-fry the tofu in a little oil until golden on all sides, then set aside. Heat oil in a large pan or wok and add the green curry paste. Fry for 1–2 minutes until very fragrant. Add the coconut milk and stir well, bringing it to a gentle simmer for 3–5 minutes.

Add vegetables in stages starting with carrots, cauliflower and runner beans and cook for 5–7 minutes. Add baby corn, peppers and red onion and cook for another 3–5 minutes. Add broccoli last and cook for 2–3 minutes until just tender but still green.

Add the tofu back into the pan and simmer for another 2–3 minutes so it absorbs the sauce. Turn off the heat and stir in the diced mango at the end. Let it sit for a minute to blend the flavours.

Serve the curry over cooked brown rice.

Here’s what you need:

* 300g quinoa
* Baby corn
* Mangetout
* Sugar snap peas
* Broccoli
* Green beans
* Pak choi
* 1 green pepper
* 1 red pepper
* Tomatoes
* 1 white onion
* Garlic
* Ginger
* Cumin seeds
* Soy sauce
* Seasoning of choice
* A little oil

Here’s what you do:

1. Rinse and cook the quinoa until fluffy.
2. In a separate pan, heat a little oil and add cumin seeds and garlic.
3. Add the cooked quinoa to the pan and mix until coated and fragrant.
4. Slice the onion, peppers and tomatoes, then finely chop the ginger.
5. In another pan, cook the onion, baby corn, mangetout, sugar snap peas, broccoli, green beans, pak choi, peppers and tomatoes.
6. Add ginger, soy sauce and seasoning, then cook until the vegetables are tender but still slightly crisp.
7. Serve the vegetables over the seasoned quinoa.
