* 1.5 cups dry rice basmati
* 2 cloves
* 2 cardoon pods
* 1 tbsp cumin seed
* 1 stick of cinnamon
* 1 tsp salt
* 1/2 onion diced
* 3 cups broth
Butter Chicken
* 1 cup plain yogurt
* 1 tbsp garam masala
* 1 tbsp Kashmiri red chilli powder
* 1 tsp salt
* 1 1/2 lbs chicken thighs
* 2 cloves garlic minced
Sauce
* 2 tbsp butter
* 2 tbsp olive oil
* 1 onion chopped
* 1 tbsp garlic minced
* 1 1/2 tsp Ground cumin
* 1 1/2 tsp Kashmiri red chilli powder
* 1 1/2 tsp Coriander
* 1 1/2 tsp Gram masala
* 2 cans 14 oz crushed tomatoes
* 1/2 cup cashews
* 3/4 cup heavy cream
* Salt
Garnish
* Red onion sliced
* Green jalapeño diced
* Cilantro minced
* Cream
RECIPE
1. Cut the chicken into 1 in. cubes. Mix the marinade ingredients into a bowl and add the chicken.
2. Cover and let marinate 30 min - 1 hr.
3. Heat oil in a large skillet or pot over medium-high heat. When sizzling, add chicken and fry until browned about 5 min. Set aside and keep warm.
4. Heat 2 tbsp of butter in the same pan/pot and cook the onions until they start to sweat (about 5 min).
5. Add garlic and saute for 1 min then add seasonings. Stir and cook for about 30 seconds. Add the crushed tomatoes and season with salt. Let simmer for about 10-15 minutes.
6. Use a hand mixer and blend the ingredients. Add 2 tbsp of butter, heavy cream, and chicken. Mix together, set aside, and keep warm.
7. Rice: Heat medium-sized pot on stove top.
8. Add oil and onion and cook until the onion is tender, about 3 min.
9. Add seasonings stir to heat and distribute for 15-30 seconds.
10. Add the broth and bring to a boil.
11. Reduce heat to a simmer. Cover pot and cook for 20 minutes, covered the entire time.
12. Remove from heat, fluff with a fork and add salt to taste.
13. Assemble: microwave the tortilla for about 20 seconds so it becomes more pliable. Add the rice, chicken, cream, sliced onions, jalapeno, cilantro, then roll it up.
14. Once formed, place the burrito on a hot oiled pan and toast the outside. Enjoy!
