Red and white chicory leaves topped with boiled new potatoes that have been seasoned and dressed in walnut oil, with halved black olives (these were stoneless salted olives from and were absolutely delicious #giftedproduct), shallot rings lightly pickled in sugar, salt and white wine vinegar, capers, boiled eggs, asparagus tips and some beautiful tuna steaks that I seasoned and seared for a couple of minutes on each side on a hot griddle.
So many good flavours in there, topped with loads of salt and pepper and a honey Dijon vinaigrette. Delicious ✨

Lots of sauce here to dip those roasties in! I am a big sauce lover….
After pan frying pork chops, I deglazed the pan with a large splash of cider. I let that bubble away for a minute before adding a heaped tablespoon of wholegrain mustard and 150g soured cream. Whisk together over a medium heat and reduce slightly before returning the pork chops to the pan. Served with roasted baby new potatoes that were happily smushed into the sauce one by one! Delicious 😌

This is rapidly becoming my go to midweek meal, it’s so quick and it only involves slicing two vegetables 😂 Sometimes this is key right?!
Start with an onion and one red pepper sliced and fried in coconut oil for a few minutes until they start to soften. Add a pinch of salt, a large teaspoon each of garlic and ginger paste, a big tablespoon of red curry paste and fry until fragrant, before adding a tin of coconut milk. Simmer until slightly thickened and the vegetables are cooked through.
I added a tin of sliced water chestnuts and bamboo shoots for the last couple of minutes of cooking then finished with a big squeeze of lime. Topped with these massive prawns we got from the Chinese supermarket that I pan fried separately for a few minutes in a very hot pan. If it wasn’t constantly raining I would have loved to do these on the bbq… Equally you could add the prawns to the sauce and cook for about 4 minutes and save yourself washing up an extra pan!

Well after a nice long holiday in Cornwall I’m home and throwing together a quick weeknight dinner again. Apparently you can’t live off pasties and fish and chips forever but I gave it a good go…
Here I roasted a bag of cherry tomatoes and three red peppers cut into quarters then in half again, in a hot oven for about 20 minutes with a little oil and salt. When chatting at the edges I tipped them and a large jar of passata into a deep saucepan. I heated it all through, adding about 300ml of vegetable stock and a pinch of chilli flakes too.
I cooked the tortellini on the hob following packet instruction and the pasta was done I added to the soup with a some parsley and lots of Parmesan to taste.
As I like things spicy, to mine I added this honestly delicious Italian hot sauce - see last picture. It’s spicy but not too spicy so falls into that category where I just keep wanting more of it! Thanks for sending me such an amazing product to try 🔥🔥

If it’s worth doing, it worth doing well isn’t it. So well I was I was prepared to spend 40+ minutes making the VERY best caramelised onions I could 😂 No regrets.
I used 3 onions, sliced not too finely and cooked them very slowly over a medium heat. After 20 mins or so when they were soft and browned I added half a cup of rich beef stock and allowed it to reduce down and be soaked up by the onions, before adding a splash more and repeating the process until I had these incredible sweet/ savoury onions and I couldn’t wait any longer to eat them.
I piled them on top of a lot of grated vintage cheddar and buttered both sides of the sandwich bread before frying in a non stick pan until golden. Chilli jam on the side 😉

This sauce is so easy and flavourful.
Simmer a tin of coconut milk with a tablespoon of miso paste, a teaspoon each of minced garlic and ginger and a few shakes of fish sauce until slightly thickened. Taste and season with a little soy sauce.
In the meantime I pan fried some salmon fillets then added to the thickened sauce, along with a handful of fresh basil and some sliced spring onions. Finished with a big squeeze of lime before serving, this was delicious - creamy, savoury and fresh all at once.

Pan fried chicken breasts in a peppery, creamy sauce packed with spinach and artichoke hearts and topped with mozzarella before being finished under the grill….this is what happens when you someone says spinach and artichoke dip and you can’t stop thinking about it all day!
I was in a hurry so used two pans to speed things up. One for frying two large well seasoned chicken breasts over a medium heat for 12-15 minutes, and the other for the sauce.
Soften a diced onion for 5+ mins until glossy, then add a tin of quartered artichoke hearts, a cup of creme fraiche and half a cup of chicken stock. Stir and season well. Add half a bag of spinach and cover for a minute or two until the spinach wilts into the sauce. Remove the lid and allow the sauce to reduce and thicken slightly. Taste and adjust seasoning, I added lots of black pepper at this stage. Add the pan fried chicken to the sauce, top with grated cheese and finish under the grill 🔥

Bolognese sauce, the old fave.
I make it in big batches and often have it ready made in the freezer for a quick meal - this time topped with cheesy potatoes. Can’t go wrong.
I sliced the potatoes as thinly as I could then par boiled for about 4 minutes in salted water, until they were soft and allowed a knife to pass easily through but weren’t falling apart. I drained them and let them dry until they were cool enough to handle before arranging over the bolognese.
Topped with grated Comte (goodbye last of the Christmas cheese) and put in a 190c oven for 20/25 minutes until golden and bubbling. I served with a simple green salad, seasoned and dressed with evoo.
Nice and easy, which is what was needed over here. Anyone else taking the easy option on what feels like day 300 of January 😂🤦♀️

You know this is going to be good.
Leftover chips was the mother of invention here but I’m definitely onto something!
I put leftover chips in an ovenproof dish and preheated the oven to 190c. For the fish I chose a large fillet of smoked haddock, which I poached on the hob for 5 minutes in some milk with a bay leaf and a few peppercorns before flaking over the chips.
Then the egg mixture. Here I used 10 eggs, beaten with salt, pepper and a large couple of tablespoons of soured cream (the soured cream makes the eggs extra rich and soft). I added a handful of torn dill and poured over the fish and chips.
Top with some grated cheese, and put in the oven for 15-20 minutes or until puffed up and golden all over. Try it. You won’t regret it I promise. Wouldn’t it also be amazing with fish fingers or battered fish…..!!
I served with a horseradish cream, mixed pickles and a side salad - radicchio topped with toasted hazelnuts, shaved Comte and balsamic glaze. Yum.

Tomatoes, garlic and chilli. What a winner.
For the sauce I sautéed two minced cloves of garlic in a splash of oil for a couple of minutes until fragrant, then added a large pinch of dried chilli flakes and cooked for another minute or so. Then a tin of tomatoes went in, a big pinch of salt and a punnet of cherry tomatoes which I simmered for about 10 minutes until the tomatoes were collapsed and the sauce was reduced enough to coat the wooden spoon thickly.
Meanwhile in another pan I cooked my chicken breasts for about 10-12 minutes over a medium heat, turning half way through and making sure I got a good colour on both sides. When cooked, I added to the arrabbiata sauce and finished with a handful of fresh basil leaves and a good grating of nutty Comte cheese.
I served with a green salad, cauliflower rice and a lot more cheese. So good 👏👏
