Crispy fries loaded with smoky taco beef, melty cheese & a spicy taco drizzle… this is the kind of dinner that disappears before it even hits the table 🤤🍟
Ingredients:
* 400g steak mince
* 1 tin chopped tomatoes
* 2 garlic cloves, minced
* 1 tbsp tomato purée
* 1 onion, chopped
* 1 red + 1 green pepper, chopped
* 1 can kidney beans (optional)
* 1 cup beef stock
* 200g fries or baby potatoes
* 1 tsp chilli powder
* 1 tsp cumin
* 1 tsp paprika
* Spray oil
* Low fat grated cheese
Taco Sauce:
* 3 tbsp light mayo
* 2 tbsp ketchup
* ½ tbsp chilli powder
* 1 tbsp garlic
* 1 tbsp mustard
Method:
1. Cook fries until golden and crispy.
2. Fry onion & garlic with spray oil.
3. Add mince and cook until browned.
4. Stir in tomatoes, purée, peppers, beans & stock.
5. Add spices and simmer until thick.
6. Layer crispy fries onto a plate.
7. Spoon over taco beef mixture.
8. Drizzle with taco sauce and top with cheese.
9. Melt the cheese and serve hot 🔥

• 2¾ cups mixed dried fruit
• 1 cup cold tea
• 4½ oz butter (room temp)
• 3 large eggs
• 4 tbsp milk

• ¾ cup soft brown sugar
• 2 cups self-raising flour
• 2 tsp mixed spice
Method:
1. Soak fruit in cold tea overnight (optional… but game-changing)
