同行者の塩もいただきましたが、どちらも塩元帥よりも塩味控えめでさっぱりした味わいで😊
どちらがいいとかではなく、どっちも好きな感じ❣️
そして、松本人志さんが、「日本一の焼き飯かも…」と口を滑らせてしまったという名物料理を😆😆😆
ほぼどのお客さんもオーダーしていて、中華鍋は常に稼働。
パラしっとりな仕上がりで、味付けも美味いですねぇ。
卵を投入する前に何かしらのタレ？を合わせてから調理されていてめちゃ気になりました😙😙
大阪の街中で駐車場も完備されているのも嬉しいところ。

製麺機での製麺を始めました😄
同じ構成で作っても、パスタマシンでの製麺と全然違うのはわかっていたけど、作ってみたらぜーーーーーんぜん違ってまたイチからやっていかないとって感じです😊
麺の密度が違って、特に細麺は詰まってる感がありますね。
製麺のプロの方にも来ていただいて、私のイメージを伝えながらどうすればよいのか熟考を重ね…
でもイメージを共有するってほんと難しくて、例えば「もちっと」でもそれぞれの経験や好みによって感じが全く違う。
私のこだわりに最後までひたすら向き合ってくださって、ありがとうございました😭😭
これから何度もやっていくうちに、理想的なものができると思います😙
今自分が思っている理想が正解かと言われたらそれはそうではなくて、正解がいっぱいあってその正解をたくさん持っておけたらいいなあって感じです。
ちなみに、初め試食した時は2分45秒くらい茹でたんですけど、茹で麺機の高火力で茹でたら1分30秒で、何で茹でるかでこんなに変わるんやなあと。
なので、麺をもらって下さった方は目安は伝えますが、茹でながら好みの加減で上げてくださいね😅

ほんのり炭火香る豚こつまぜそば
晴耕雨読さんで「豚こつ」の文字を見るのは自分は初めて。
こちらもメニュー見た瞬間オーダー決定で😙😙
豚こつと書かれてはいるがメニューをよく見ると、黒豚＋とり、地どり＋きじ＋エミュー。エミュー？？？？？
と、なんかすごい感じが😳
スープを飲むと豚が強いものの、動物の複合的なまろやかな味わいがガツンと押し寄せる。
混ぜると炭脂が主張してきて、晴耕雨読ファンならわかるあの感じが😌
チャーシューは赤身多めな部位。
厚めカットで旨味を噛み締めながらいただく☺️✨✨✨
この日は朝にラーメンを家で食べてしまったのでこれが3杯目😂😂
それでもこんなに美味しくいただける最高のまぜそばでした😆

京地どりだしまぜそばと黒豚チャーシュー
吊るし焼豚をするお店の中で神的存在。
どんな部位でも極上の仕上がりに😌
今回は黒豚ということで、メニューを見た瞬間決定で❣️
モモ肉がこんなにしっとりと焼き上がる、基本的に脂身もそのまま焼かれるのだけどしつこくなくて旨味が強い、表面の香ばしさもたまらなく好き…とホンマすごいチャーシューなんです。
肉を噛んだ時の溢れる肉汁を思い出すと、いつでも口の中がじゅわっとなってしまいます笑笑
スープは、濃厚な鶏出汁。少しニンニクが効いている。
香りの良いちゅる麺。
細麺でしっかり茹でられているのでオイルもスープもよく絡んできて、ひと口ひと口が濃厚すぎる☺️✨✨✨

全粒粉配合の蕎麦麺で冷やしを😊
しかも、動物系強めのスープに合わせて。
鶏と少しの豚に、煮干しや節の旨味を足した仕様。
カエシは生揚げ系の香りの良いもので、仕上げに地鶏鶏油も合わせました😙✨✨✨
めちゃくちゃ美味いです。
自分で言う時はほんまに美味い時笑

時間を見つけて、とりあえず我が家にある粉でどんな感じに仕上がるかやってみます。
パスタマシンとの違いを楽しみながら、その粉への理解をもう一度見直していかねばなりません。

前回使った麺でぶっかけ蕎麦を😙💕
茹で時間を30秒短くして、より喉越し良い感じに仕上げました☺️☺️
これはマジ美味いです。
トッピングは、とろろ、大葉、九条葱、きゅうり、オクラ、バラ海苔、新生姜漬け、味玉。
香り、食感、色合い、それぞれのいいところが出てます😊
濃濃好〜黒のカエシ作りで使う乾物の出汁ガラを使えないかと味玉の漬け汁に使ってみました。
簡単に捨てるのもったいないので、大切な食材を最後まで使い切りたいです。

蕎麦粉は使わず、春よ恋の全粒粉、キタホナミ、せときららの3種類で構成した麺☺️
香りと食感とをどう出していくか考えて組み合わせた配合です。
前からこのタイプの麺を作っているのですが、きっかけは、うちの子が蕎麦アレルギーで蕎麦のような良い香りのする麺を食べられないというところから始まりました。
ラーメン的でもなく、うどんのようでもなく、香りや喉越しは蕎麦です😌😌
まずは汁につけずに塩でいただくと麺の感じがよくわかる❣️

真鰯の煮干し100%のお出汁で❣️
だいぶ大きなサイズの鰯で単体でもパンチのある出汁が出るが、背黒を合わせたらかなり良い仕上がりになりそう😊✨✨✨
いろいろな煮干しを試す中で特徴もわかってきたので、自分好みの背脂煮干しを作り上げていきます👍
