This instant, divine flavored barfi is made with just a handful of ingredients and makes for an amazing summer treat. Give your regular coconut barfi a healthy twist with this delicacy and thank me later 🥰
Here's a quick recipe of my family favourite barfi in case you wish to try it.
Ingredients:-
- 2.5 cups freshly ground coconut
- 1 cup cream / malai
- 1 cup full fat milk
- 1.5 cups sugar
- 1/2 cup gulkand
- 1 tbsp spoon ghee
Method:-
1. Mix coconut, malai, milk and sugar in a pan.
2. Mix well and cook on medium flame till the mixture comes together and leaves the sides
3. Add the gulkand and mix well
4. Switch off the flame, add ghee and mix well
5. Grease a plate with ghee and immediately transfer the mixture into it.
6. Set well forming a block
7. Cut into pieces with a knife greased with ghee and allow it to cool
8. Once the mixture is cooled, store the barfis in an air tight container.

Here goes a quick recipe of these addictive Farali cutlets
Ingredients
- 1/2 cup barnyard millet flour
- 1 large potato boiled and mashed
- 1/2 cup grated paneer
- black salt, amchur powder, red chilli powder for taste
- 1 inch grated ginger
- handful of finely chopped coriander leaves
- ghee/oil for frying
Method:
- Mix together all the ingredients to form a dough
- Make small cutlets and shallow fry on both sides till golden brown
- Serve hot with chutney of your choice

My today's vrat thali comprises of
💛 Samak rice set dosa
💛 Green chutney
💛 Makhane
💛 Dates
💛 Samak rice and anjeer kheer
This divine flavored, creamy dreamy kheer was an instant hit amongst friends and family...
Guys, you have to try this kheer, I insist!
And oh! Don't forget to thank me later 😊
So here goes the recipe!
Ingredients
- 1/2 cup samak rice
- 4 Cups full fat milk
- 1/4 cup sugar
- 3-4 anjeer/figs soaked in water for 15-20 mins
- 1 tsp cardamom powder
- nuts of your choice (optional)
Method
- Wash samak rice thoroughly and keep aside
- Heat milk in a pan
- Once the milk starts boiling, add the samak rice and stir. Cook the rice on medium heat,stirring occasionally
- The rice will be fully cooked after 15 mins and the kheer thickens
- Now add sugar and cardamom powder. Mix well
- Cook for another 3-4 mins and switch off the flame
- Chop the soaked figs, add to the kheer and mix well.
- Refrigerate for 1-2 hours and serve chilled

Friday definitely calls for some fun fasting menu.
And here is my Navratri day 3 Vrat thali comprising of
♦️ Aloo ki sabji
♦️ Rajgira pooris
♦️ Shrikhand
♦️ Green chutney
♦️ Almonds
During the fasting season, ingredients like fruits, dry fruits, kuttu ka atta are preferred as they are light on stomach and easy to digest.
Rajgira/amaranth is yet another super food consumed largely during the fasting season.
It is full of antioxidants, vitamins, iron and calcium and makes for a perfectly healthy and wholesome vrat option!
I've grown up relishing this delicious Vrat thali and sharing the recipe of rajgira pooris and potato sabzi today!
Hope you like it!
Rajgira pooris
Ingredients
- 2 cups rajgira/amaranth flour
- 1/2 tsp black salt
- 2 tsp oil
- finely chopped coriander leaves
- water
- ghee for frying
-
Method
- Mix all the ingredients except ghee to form a dough
- Keep it covered for 5 mins
- Heat ghee in a pan
- Roll the dough into small pooris.
- Fry them in ghee till crisp
- Serve hot with aloo ki sabji and Shrikhand
Aloo ki sabji
Ingredients
- 3 medium size potatoes boiled and cubed
- 1/2 cup roasted peanut powder
- 1/2 tsp red chilli powder
- black salt and sugar for taste
- 1 tsp cumin seeds
- finely chopped coriander leaves
- 1 tbsp ghee
- juice of half lemon
Method
-Mix together, cubed potatoes, salt, sugar and peanut powder
-Heat ghee in a pan
-Add cumin seeds, red chilli powder
- Next add in the potato mixture
- Mix well and let cook for 2 mins
- Add in the coriander leaves and switch off the flame
- Add lemon juice, mix well and serve hot
