Ho fatto questi biscotti perché avevo cotto della zucca per degli gnocchi, ho usato solo la polpa e mi sono ritrovata con le bucce e parte della polpa attaccata. Ovviamente ho usato una zucca bio e sapendo che poi avrei fatto i biscotti, diciamo che non ho ripulito perfettamente la buccia ma ho lasciato appositamente un po’ di polpa attaccata.
Questa modalità è se volete una versione zero sprechi ma ovviamente potete usare anche solo la polpa. Non usate solo buccia però!
INGREDIENTI:
200 g di polpa e buccia di zucca
130 g circa di farina di riso
1 cucchiaio di olio di cocco oppure olio evo
Acqua q.b. se necessaria
Lavate molto bene la zucca, rigorosamente bio, io ho usato una hokkaido. Eliminate i semi, tagliatela a fette e cuocetela in forno, senza nulla, per circa 35 minuti a 180° ventilato. Il tempo dipende dallo spessore delle fette. Togliete la zucca dal forno quando sarà morbida, non seccatela altrimenti la buccia diventa dura e secca e non va bene perché non si frulla.
Tritate la zucca con l’olio, aggiungete la farina di riso e impastate. Sulla quantità di farina regolatevi ad occhio, dipende da quanto è acquosa la vostra zucca.
Stendete l’impasto dello spessore di 5mm, aggiungete farina se necessario, intagliate i biscotti e cuocete in forno a 180° ventilato per circa 25 minuti. Regolatevi ad occhio.
Cambiano le panchine, le stagioni, passano gli anni, ma panchinaro sono e panchinaro rimango 😅
