Today marks 10 years since the war in Syria started. This is my mother's traditional Fatteh'd Magdous I wrote for the book. The charity book donated 100% of proceeds to Syrian children affected by the war. The campaign raised over $1 Million worldwide (we raised over 100k AED with our charity dinner here in Dubai). Also sharing the recipe below for those of you who want to bake something special this weekend β€οΈ

BABKA DOUGH
β 2 large eggs
β 120g milk
β 25g caster sugar
β 25g honey
β 420g strong flour
β 18g fresh yeast
β 5g table salt
β 170g soft butter
.
PBJ FILLING
β 140g green pistachios
β 140g green pistachios
β 3g ground cinnamon
β 1 pinch Maldon sea salt
β 30g honey
β 300g cherry jam or just your
favourite jam
β 5g sumac
β 100g fresh cherries
.
FINISHING
β 50g water
β 50g caster sugar
β Pistachios & Rose petals to decorate
.
INSTRUCTIONS
β For the dough, put the eggs, milk, sugar, honey, flour and yeast in the order listed into a stand mixer with a dough hook attachment.
β Knead for 2 mins on the lowest speed. Add the salt and increase the speed to 2 for 3 mins.
β Add the butter slowly and knead until the dough is elastic and shiny, then prove the dough for 4-5 hours overnight in the fridge.
β Add the sugar and water to a small saucepan and heat while whisking until the sugar is dissolved to make the sugar syrup. Allow to cool.
β For the pistachio butter blitz the pistachios, cinnamon, sea salt and honey in a food processor, saving some green pistachios for decoration.
β Take out your babka dough and roll out to a 45x55cm rectangle.
β With a palette knife or spatula spread the pistachio butter all the way to the edges of dough.
β Spread the jam over the pistachio butter layer and scatter over the halved and pitted cherries and sumac.
β Tightly roll up the babka.
β Split into two lengthways, cross the two pieces over each other and twist both ends around the other to shape your babka.
β Transfer to a parchment lined loaf tin and proof for another 2-3 hours.
β Bake at 155 Β°C for 1 hour 15 mins. Pour over sugar syrup as soon as it comes out the oven, and top with the reserved crushed green pistachios and rose petals.
β Allow to cool for at least an hour before slicing.

We've created a pizza using British zaβatar halloumi made by Razan Alsous. Razan came to the UK in 2012, fleeing the Syrian war with her husband and young children. Facing difficulty finding a job using her pharmaceutical degree and experience, Razan took matters into her own hands to create the Syrian squeaky cheese she missed so much, using fresh high quality British milk. Collaborating with Razan enabled us to highlight her bravery whilst donating to this excellent cause.

The pizza is also topped with a homemade radish pesto, fermented cherry tomato bombs, our house slaw, a pickled chilli and radish garnish, plus drizzled with lovely, pink beetroot hummus. This pizza has the feel of a deconstructed kebab made with quality ingredients"ππ½ This pizza is available exclusively throughout November at Thursday- Saturday from 5pm.
