Barriga/costela suína pururuca:
deixa na geladeira a peça de carne suína fora da embalagem por pelo menos 1 hora ou mais para o couro secar, coloca sal grosso no couro e monta uma trouxinha de papel alumínio em volta
Coloca no forno a 150 graus, por 3 horas a 3 horas e meia, depois liga o grill do forno (ou forno a potencia maxima) e rapidamente (poucos segundos) vai pururucar a peça toda. Se precisar, ajuste o sal na hora de servir
Paleta/pernil cordeiro:
Se já temperado, coloque a peça em uma assadeira, podendo colocar papel alumínio por baixo, ou não, e asse lentamente no forno a cerca de 150 graus
Em 3 a 4 horas (quanto mais tempo ficar, sem queimar, mais macia fica)
Caso prefira, no final pode aumentar a potencia para dar uma dourada na peça
