- 2 cups flour or oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 3/4 cup yogurt of choice
- 1/3 cup milk of choice
- 2 ripe bananas
- 2 eggs
- 2 cups spinach
- 1 teaspoon vanilla
Blend all dry ingredients, and then add mixture to wet ingredients. Bake at 375° for 20-25 minutes.
VEGGIE-LOADED PIZZA MUFFINS🥒(recipe from )
- 1/2 cup grated carrots
- 1/2 cup grated zucchini
- 1 cup chopped spinach
- 2 eggs
- 1/4 cup olive or avocado oil
- 1 cup milk of choice
- 1/4 teaspoon garlic powder
- 1/2 tablespoon Italian seasoning
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups flour
- 1 1/4 cups shredded mozzarella
- 1/3 cups chopped pepperoni
Squeeze as much moisture out of the carrots & zucchini as possible. Add into bowl & mix with spinach, egg, oil, and milk. Combine! Then add all seasonings, and flour. Combine! Add 3/4 cup of the mozzarella and most of the pepperoni. Pour into muffin pan (12) and top with remaining pepperoni and cheese. Bake at 350° for 20 minutes or until a toothpick comes out clean.
