🍑 Here’s what you need to make this at home:
Peach Galette:
1 puff pastry sheet
2 to 3 peaches
1/4 cup lemon curd
1 tbsp granulated or cane sugar
1/4 cup egg wash (1 egg + 1 tbsp water)
Toppings:
Vanilla Ice Cream
Edible flowers
Instructions:
Preheat the oven to 400°F (200°C)
Thaw the puff pastry for 10 to 15 minutes if frozen.
Cut the peaches into even slices, set aside until ready to use
Place the thawed puff pastry on parchment paper and, using a rolling pin, roll it out to smooth out the edges.
Lightly prick the center with a fork before adding the lemon curd.
Spread the lemon curd onto the center of the pastry, leaving about an inch from the sides.
Arrange peach slices over the lemon curd. Fold the edges of the puff pastry over the peaches' outer edges, leaving the center exposed.
Brush the edges with egg wash, sprinkle with sugar, and bake at 400°F for 15 to 25 minutes or until the edges are golden brown and the peaches have softened. 20 minutes was the perfect time for me.
Let the galette cool slightly, then serve with vanilla ice cream and a sprinkle of edible flowers.
