Also, I’m not a fan of placing ice cream on top of a hot dessert because it melts, looks messy and the guest experience is a softer ice cream instead of a very cold vs hot temperature contrast. This presentation still gives it the over the top feel and we’re not worrying if it has to sit for a couple of minutes for a runner or server to take it out to our guest.
