is one of my long time mentees that truly took the craft of food painting forward. And looking at the evolution of her food paintings, I feel something closer to wonder than anything I’ve ever felt about my own. This post is a small celebration of that 🎨

I started painting with food in 2010 as a question: what happens when eating becomes an act of looking (really looking) at color, texture, composition? When the plate stops being a delivery system and becomes a canvas? And what if the table becomes the plate?

Visual presentation is never just decoration. Color and movement primes the brain before the first bite 🧠 The visual cortex fires before the tongue does. Research in gastrophysics shows that what we see on a plate directly shapes what we taste: composition creates anticipation. A plate that is beautiful doesn’t just please the eye. It changes the flavor.

But beyond the science, food painting does something simpler and more profound: it turns eating into a shared ritual ✨ A moment of genuine presence. A conversation between the person who made it and the person who receives it. People remember these moments in a way they rarely remember a meal.

Seeing carry this forward - with her own sensitivity, her own palette, and her own voice - reminds me why I believe so deeply that food is one of the most powerful creative languages we have 🌏

My father has been tending the land since he was a little kid. He is 70 now.

I have spent my whole life watching him - in the garden, at the hives, always moving, always thinking, always giving something back to the soil 🐝 He is something rarer in this time and age: a person who has shown up for nature, every single day, for over half a century - someone whose university has always been the garden. A true steward of the earth. A true teacher 🌱

When he bought his (our) land in the southwest of France, the soil was mostly heavy clay. No food would grow. Fifteen years of organic matter, chicken poop, patience, and manure from the neighbours’ horses and sheep later, it became a very fertile land πŸ“πŸ΄

Life at ⛰️

A desert land in Northern Nevada - part land regeneration project, part living laboratory, part home for people who believe that how we build, gather, and steward land needs to be fundamentally reimagined. and have given me the extraordinary gift of time here: to think, to grow food, to write.

There are three main things I am working on - each one something I’ll share more about in the weeks to come, because each one deserves its own conversation.

I wake up to silence, nature’s murmur - whether wildlife or wind - and open sky πŸŒ„ I bike around gravel roads while mustangs, jackrabbits, pronghorn and deer roam somewhere in the distance. I cook all my meals, and tend my camper home - carrying water, fixing things, spending energy with the sun’s rhythms β˜€οΈ

I spend a considerable time just contemplating.

I help tend a vegetable garden that is, somehow, slowly coming alive in the desert 🌱

And for the first time in a long time, I have all the conditions to focus on writing. A decade of research, reflection, and conversations around tables and classrooms across the world, slowly turning into my first book πŸ“–

Landing Retreat - Part II & Warmis knowledge 🌿

A few weeks ago, we gathered upstate New York together with a small group of people around practices of connection: through food, voice, gardening, conversation, and time spent in nature πŸ‘©β€πŸŒΎπŸ‘¨β€πŸŒΎ

One of the most meaningful moments was helping build the beginning of a new garden bed on the land - moving tons of rocks and soil. As we wrapped the day, I shared that what we had just done is known as a β€œMinga” in the Andes.

A few days later, at - invited by - we had the chance to experience a morning in the life of the Warmis near Maras, in Peru’s Sacred Valley.

Landing Retreat - Part I

This past week, I participated at β€œLanding, V1”, co-hosted by my dear friends and around the beautiful land projects they are developing Upstate New York 🏞️

A moment that will forever stay with me was evolving my food painting practice into something closer to land art πŸŽ¨πŸƒ Instead of creating the piece indoors, on a table or canvas, we walked into the forest near a waterfall. And on a large flat stone, cleaned with vinegar, I began composing the food, surrounded with new friends 🀲

The experience became less about plating and more about presence. A contemplative act. An ephemeral installation made of food, colors, textures, all the hands involved in the making of the food, and the surrounding landscape.

And then, we all ate together.

There was something deeply beautiful about the moment, represented through food, and that landscape becoming part of us πŸ«€πŸ§¬

Gastrophysics brings together food science, psychology, behavioural research, and the social sciences to better understand how we perceive, choose, and experience food - and how we can design better systems through that understanding.

What excites me most is its potential to uncover evidence-based pathways for rethinking food as a tool for transformation.

For many years, my dream was that this discipline would have one day be taught at schools.

What would it mean if kids had the opportunity to learn about food during their formative years - how to grow it, how to transform it, and how to eat it?

Many of the challenges we face today around consumption, behaviour, and public health could be approached differently if we started there, shaping a better food and eating culture for future generations 🌎🌱
