Ingredients:
½ a block of Cauldron Extra Firm Tofu, grated
1 Mission Carb Balance Tortilla Wrap
1 tsp light soy sauce
2 tsp olive oil, plus more for drizzling
2 tsp paprika, 1 tsp cumin, 1/2 tsp fajita seasoning, 1/2 tsp garlic granules, 1/2 tsp oregano, 1/4 tsp chilli flakes, 1/2 tsp sea salt, 1/4 tsp black pepper
20g black beans, drained
20g sweetcorn, drained
½ a white onion, diced
2 garlic cloves, diced
3/4 tbsp tomato puree
100ml of passata
Guacamole
Pico de gallo - diced tomato, cucumber, red onion, lime juice, salt & pepper
Lime
Fresh parsley

Method:
1. Preheat the oven to 160 degrees C. Slice half a block of Cauldron Extra Firm Tofu, press out excess liquid and grate into a bowl until shredded.

2. Pour over the soy sauce and olive oil, season well and toss in the seasonings. Add to oiled baking tray then drizzle oil over the top. Bake for around 20-30 minutes, tossing halfway through - the tofu should be golden and slightly crispy.

3. In a saucepan, add the black beans and sweetcorn and season with salt, pepper, garlic granules, paprika, oregano and drizzle with a bit of olive oil. Heat on low-medium, stirring occasionally.

4. In a large pan, fry the onion followed by garlic until soft and fragrant. Add in the tomato puree and cook for 2 minutes.

6. Once the tofu has baked, add to the pan along with passata, combine until a thick sauce has formed. Season to taste and set aside.

7. Assemble the burrito with Mission Carb Balance Wrap - add the guacamole, tofu burrito mixture, black beans, sweetcorn, pico de gallo and fresh parsley before wrapping up.

8. Fry on the same pan you made the tofu filling in until toasted on both sides!

9. Garnish with pico de gallo and fresh parsley and enjoy!

ad Kimchi fried rice & BBQ tofu 🍚 I’ve teamed up with to show you their brand NEW Express Smoky BBQ Grillable Tofu which is ready marinated, high in protein and cooks to perfection in just 5 minutes!

I served mine with kimchi fried rice and flash pickled veg for that perfect January pick-me-up. To make:

1 block of Cauldron Smoky BBQ Grillable Tofu

For the rice
300g cooked day old rice
1 spring onion, chopped
1 carrot, diced
1/4 cup kimchi, chopped
1tbsp kimchi liquid
1tbsp dark soy
1tsp gochurgaru chilli flakes

For the pickles
1 carrot, peeled and ribboned
1/2 cucumber, peeled and ribboned
1tsp salt
1tsp sugar
2tbsp white wine vinegar
Chilli flakes (optional)

-Chop the tofu into rectangles or chunks
-Preheat 1 tbsp of oil. Fry over a medium heat, turning frequently.
-For the rice, add the veggies to a pan for 2 minutes. Add kimchi and kimchi liquid. Cook for 1 minute before adding rice. Add dark soy and chilli flakes.
-Add your carrot and cucumber to a bowl. Add salt, sugar and chilli flakes if using. Cover with white wine vinegar and leave to pickle (about 5-10 minutes)
-Serve it all together and enjoy
