Finely diced onion
Finely diced, de-seeded tomato
Finely chopped fresh mint & coriander
Tamarind sauce (home made or shop bought)
Salt to taste
Chili powder & chili flakes to your preference
Lemon juice to taste
Mix it all up, taste & adjust seasonings if you need to

Before serving, drizzle over thinned out yoghurt & more tamarind sauce, sev & a sprinkle of chaat masala.

A delicious slow baked lamb recipe that is extra special to me because it’s a favourite of my dad’s 💕.

It tastes best when cooked with large chunks of fatty meat, beef or lamb.

Slow baked lamb

In a thick oven proof dish layer thickly chopped onions & thick slices of tomatoes. Sprinkle some garlic powder & onion powder.
Marinate meat in a generous amount of crushed garlic, some thinly sliced ginger, a bit of lemon juice, chili flakes, salt & pepper. Layer over the onions & tomatoes. Top with some green chillies & generously dot with ghee or a good quality butter. Cover tightly with foil & then the lid, & bake in oven on high for half an hour. After that, lower the heat (around gas mark 3) & slow cook until super tender. Plate up & drizzle over all the delicious juices & melted butter. Serve with naan or chapati & a spicy mint sauce.

This dish contains minimal spices but the taste of the meat is elevated by the salt & the melted ghee/butter/fat. Don’t skimp on the butter & salt (salt to taste as per individual preference) as it makes the dish, & it won’t hurt because this isn’t something you eat regularly!

Sardai, also known as thandai, an extremely refreshing Punjabi drink perfect for a hot summers day. If you are Gujerati & love ‘Eid milk’ (iykyk) you will love this!

Sardai
Soak in warm water
20 almonds
20 shelled pistachios
15 cashews
1 tbsp poppy seeds
1 tbsp fennel seeds
3 black peppercorns
Soak these for a minimum of 5 to 6 hours, after which grind the mixture into a very smooth paste. Your Sardai mix is ready.

Boil a litre of milk with a few strands of saffron, white sugar to preference & a tbsp of rose water or rose jam. Once boiled, cool completely.
To each cup of milk add 1 or 2 tbsp of the paste, mix well. Add ice cubes, garnish with more nuts if you like or rose petals & serve. You can also pre make in a jug & refrigerate, ready to drink whenever you like. Enjoy!

Freshly squeezed lemon juice
Any peri seasoning (powder not sauce)
Spices of choice I added a little
Cumin powder
Chili powder
Mix well.
Air fry/pan fry/grill

Chicken 65.. a delicious South Indian dish bold & punchy in taste AND looks 😄. Give it a try, it’s simpler than it looks!

Marinate boneless chunks of chicken in
Garlic
Red chili powder
Kashmiri chili powder
Lemon juice
Yoghurt
Pinch of red food colouring
Pinch of Chinese salt (optional)
Coriander & cumin powder
Marinate for a minimum time of 45 minutes.
Coat marinated chicken in cornflour & deep fry. Drain & set aside.
In a wok heat a little oil. Add in mustard seeds & allow to splutter. Add in curry leaves, minutely chopped fresh garlic, a few sliced green chillies & stir fry for a couple minutes, stirring constantly. Pop in the fried chicken, a few squirts of chili sauce, 3 or 4 tbsp of water, some chopped coriander stems & stir fry for a further few minutes. Garnish & serve.
You can serve as a starter on its own or as a main with couscous, rice, chips or salad.. the options are endless.

Jumbo picalilli spring rolls!

Cook tiny chopped chicken fillet pieces in a little butter with lots of fresh garlic paste. Grind fresh coriander & green chilies & add this to the chicken amount according to preference.
Peel & chop potatoes into tiny cubes. Boil & set aside.
To the chicken add some coriander & cumin powder. A little black pepper.
Once the chicken is dry add sweetcorn & a splash of soya sauce. Mix in the potato's. Add in picallili sauce of any brand. Start by adding a tbsp at first, & taste the mixture to adjust to your preference. Add more if you feel you need more flavour, & also adjust salt etc to your own liking!
Cool & slice in spring onions & mix well.
Fill into spring rolls as normal. I used the large samosa sheets for these, 1 sheet per roll.
Perfect for freezing.

Karele - or in English known as bitter gourd!
I think most of us hated this vegetable when young, but I've grown to like it, not to mention the numerous health benefits it contains, anti inflammatory, reduces blood sugar & so on. The jaggery in this recipe helps reduce the bitter taste.

Clean & slice bitter gourd, or simply buy the ready cut packets available in Asian supermarkets.

Sizzle a tsp of cumin seeds in some olive oil. Slice onions thinly & soften. Some chopped spring onions & sliced red chilies. Salt, chili powder, coriander & cumin powder & turmeric. Splash of lemon juice. Saute on high for a few minutes & then lower heat. Add in a tbsp of gur (jaggery) & cook on low to medium, covered, until cooked through.
Occasionally I thinly slice potatoes & add them in too.

Gazebo chicken- an incredibly tasty fusion dish, easy to make too. Delicious served with chips, egg fried rice or even with a salad.

I make this with boneless chicken & sometimes with baby drumsticks too.
Marinate washed & drained chicken with a beaten egg, lots of minced garlic, chili flakes, salt & pepper a dash of chili sauce & a dash of vinegar/lemon juice for an hour.
After this add enough cornflour to coat chicken. Deep fry, drain & set aside in an oven friendly dish.
Make a sauce with ketchup, soya sauce, chili sauce (i use two types, chili garlic sauce & any runny hot sauce), chili flakes, garlic powder,a little olive oil, a little water to loosen. Spring onions. Mix thoroughly & heat up in a pan. Once it starts to bubble around the edges take off the heat & pour evenly on & around the chicken. Cover with foil & heat on medium to low heat in the oven for half an hour. Enjoy
