Method:
1. Whisk the eggs, green onions, seasoning, and half the cheese in a baking dish. Bake for 15–20 minutes at 180°C/350°F.
2. Air-fry or grill the bacon while the eggs cook.
3. Slice the baked eggs into 4 squares and layer onto each bagel with the bacon.

Ingredients [makes 6 portions]
* 500g Chicken Breast (Raw Weight)
* 1 Pack of Fajita Seasoning
* 6 Tortilla Wraps
* 120g Low-Fat Cheddar Cheese (or Mozzarella)
* 750ml Tomato Passata
* 2 tbsp Tomato Puree
* 1 tbsp Olive Oil
* 1 Whole Red Onion
* 2 Whole Peppers (Red and Yellow)
* 1 Red Chilli (omit if you don’t like spice)
* 1 Tsp Garlic Powder
* 1 Tsp Onion Powder
Method:
1. Cook your onion, pepper & chillies in olive oil with half the seasoning until softened.
2. Season chicken and air-fry at 180°C for 18–20 mins, then shred.
3. Stir tomato purée & passata into the pan, simmer, then add the chicken.
4. Fill and roll tortillas, place in a baking dish, top with sauce & low-fat cheddar.
5. Bake at 180°C for 15–20 mins until the cheese melts.
6. Finish with fresh coriander, and a spoon of Greek Yoghurt (great sour cream alternative) and enjoy!
