This cottage pie was one of our favourite dinners this week and exactly the kind of meal I come back to when I want something warm, comforting and filling. Perfect for this rainy weather we’ve been having!
RECIPE 👇🏼
✨ COTTAGE PIE
1–2 tbsp olive oil
500g beef mince
1 onion, finely chopped
2 garlic cloves, crushed
1 carrot, chopped
1 celery stalk, chopped
(Or around 1 cup of mixed veggies — I often use my frozen veggie cubes)
1.5 tbsp plain flour
1 tbsp tomato paste
500ml beef stock
2 tbsp Worcestershire sauce
1 thyme sprig
1 bay leaf
FOR THE MASH 🧡
1kg potatoes, chopped
250ml milk
25g butter
1 cup grated cheese
METHOD:
1. Preheat oven to 180°C.
2. Heat olive oil in a large pan and cook onion until softened. Add garlic, mince and veggies and cook until browned.
3. Stir through flour and cook for 1 minute.
4. Add tomato paste, beef stock and Worcestershire sauce and stir well. Add thyme and bay leaf if using.
5. Simmer gently for around 45 minutes until rich and thickened.
Meanwhile:
6. Boil potatoes in salted water until soft. Drain and let them steam dry for a minute or two before mashing.
7. Add milk, butter and most of the cheese (saving a little for the top) and mash until smooth and creamy.
TO ASSEMBLE ✨
8. Spoon mince mixture into a deep baking dish. Top with mashed potato and smooth gently with the back of a spoon. Finish with remaining cheese.
9. Bake for around 30 minutes or until golden and crispy on top. Let stand for 10 minutes before serving.
I love serving this with steamed green beans on the side 🤎

Well… my husband (who does not even have Instagram) saw the story when it shared to Facebook and secretly bought me this set for my birthday.
I honestly love them so much. And I know the girls who get it… totally get it 🧡
Now I just need to completely remodel my kitchen so I can have open shelving to display these beauties…💁🏻♀️😂 (they’re too pretty for a cupboard!!)
These are two lunches I make on repeat because they’re easy, filling, freezer-friendly and my kids genuinely love them.
A big crustless quiche when I’m short on time (or mini ones for lunchboxes), plus sausage rolls for the freezer or for quick comforting lunches during busy weeks.
RECIPES BELOW 👏🏼
✨ CRUSTLESS QUICHE
5 eggs
1 cup milk (or cream for a richer quiche)
Choose up to 3 mix-ins:
* 1/2 cup diced ham, bacon or sausage
* 1/2 cup grated cheese
* 1 cup baby spinach or other tender greens
* 1/2 cup grated potato or sweet potato
* 1/2 cup cooked veggies (capsicum, zucchini, mushrooms etc)
METHOD:
1. Preheat oven to 180°C and lightly grease a pie dish.
2. Whisk eggs and milk/cream together and season with salt and pepper.
3. Pour into dish and scatter over your mix-ins evenly. Gently press them down into the egg mixture.
4. Bake for around 30 minutes or until golden and set in the middle.
Keeps in the fridge for up to 4 days or freeze for up to 3 months.
✨ SAUSAGE ROLLS
500g mince (I used pork & beef)
1 carrot, grated
1 zucchini, grated
2 slices bread, torn into small pieces
2 tbsp tomato sauce
1 tbsp Worcestershire sauce
Salt & pepper
3 sheets frozen puff pastry, thawed
METHOD:
1. Preheat oven to 200°C and line a tray with baking paper.
2. Add everything except the puff pastry to a bowl and use your hands to combine well.
3. Divide mixture into 6 portions. Cut each pastry sheet in half.
4. Shape one portion of filling into a long sausage shape down the centre of each pastry half, then roll up and place seam-side down.
5. Cut each roll into 4 pieces.
6. If cooking straight away, brush with milk or egg, sprinkle with sesame seeds and bake for around 20 minutes or until golden brown and cooked through.
FREEZER METHOD 🧡
I like to freeze these before baking so we can cook just a few at a time for easy lunches.
Wrap unbaked rolls in parchment paper, place in an airtight container and freeze for up to 3 months.
Bake from frozen at 200°C for 25 mins or until golden and cooked through.

Our second weekend away in the caravan and honestly… probably exactly where I’ll come back to in my mind 20 years from now when I think about the good old days 🥰
Turns out making sure the pan is hot enough BEFORE anything touches the pan is key.
Heat pan first → do water test → add oil → then food.
Once I started doing this, the clean up became so easy and I’ve switched totally back to stainless steel. All my non-stick pans are out! 🧡
Sharing this in case anyone else has switched back to stainless steel pans and could do without all the scrubbing 😂
I still can’t get over that the “cookie dough” is literally just ripe banana + almond meal. It somehow turns into the softest cookie dough texture naturally.
I love that it’s:

✨ feels like a treat straight from the freezer
We just mix through choc chips, drizzle with melted chocolate and freeze. So easy.
RECIPE:
2 ripe bananas
2 cups almond meal
1/3 cup chocolate chips
Chocolate drizzle:
1/2 cup chocolate chips
2 tsp coconut oil
Mash bananas, then stir through almond meal and chocolate chips.
Press onto a tray or container that fits into your freezer.
Melt chocolate and coconut oil together and drizzle over the top.
Freeze until firm, then snap or cut into pieces and enjoy 🤎
