Instructions
1. Heat EVOO in a pan over medium heat.
2. Add ginger, garlic, and red onion. Sauté until fragrant.
3. Add a splash of soy sauce and the ground pork.
4. Stir in hot pepper paste, salt, black pepper, and a generous spoon of oyster sauce.
5. Once pork is cooked, add broccoli slaw and mix well.
6. Remove from heat and let filling cool for ~15 minutes.
7. Crack an egg and set aside for egg wash.
8. Lay out egg roll wrapper, add filling, roll tightly, and seal with egg wash.
9. Fry egg rolls in oil until golden brown (about 8–10 minutes total).
10. Plate with rice, serve with duck sauce, dip, and enjoy!

On today’s episode of Cooking with Carlos, we’re making one of my all-time favorites: Ceviche. Fresh, bright, and all about balance.
I grab my fish from Dave’s Market here in RI—my go-to is Mahi-Mahi, but ceviche is versatile. You can also use Chilean Sea Bass, Corvina, Tilapia, or for a quick serve, sushi-grade Tuna.

🐟 THE FISH
• Mahi-Mahi (cubed, super fresh)
or Sea Bass / Corvina / Tilapia / Sushi-grade Tuna

🥔 PREP FIRST
• 2 sweet potatoes
• 2–3 medium potatoes
Cut into sections and boil until fork-tender.
Preheat oven to 425°F.

🌶️ LECHE DE TIGRE (This Makes or Breaks It)
Ingredients:
• 1 Aji Limo
• ¼ clove elephant garlic
• Fresh ginger (generous amount)
• ¼ celery stalk
• ¼ large red onion
• Fresh cilantro
• 10–12 freshly squeezed limes
• Aji Amarillo paste
• Salt (to taste)
• Aji No Moto (MSG – secret weapon)
• Small piece of fish

🪨 BUILDING THE FLAVOR
In a molcajete, add:
• Aji Limo (halved)
• Garlic
• Ginger
• Celery
• Red onion
• Cilantro leaves
Mash until everything releases its aroma.
Add Aji No Moto, salt, and a small piece of fish.
Slowly add lime juice (save a little for later).
Taste as you go—balance is everything.
Let this marinate 20 minutes.
(At this point, the smell alone should have you starving.)

🔥 CRISPY POTATO UPGRADE
Drain potatoes, place on a baking tray:
• Drizzle EVOO
• Roast at 425°F for ~20 minutes
Not traditional—but once you go crispy, there’s no going back.

🥗 ASSEMBLING THE CEVICHE
In your bowl:
• Remaining celery (chopped)
• ½ large red onion (sliced)
• Cilantro
• Cubed Mahi-Mahi
Mix gently.
Add:
• Reserved lime juice
• 1 heaping spoon of Aji Amarillo paste
Drain the Leche de Tigre from the molcajete—press it hard, don’t waste a drop.
Pour it in. Mix. Plate with crispy potatoes.
Lettuce leaf missing? No stress. We adapt.
