🎂 Place a lot of icing on top of the cake before pressing the top disk on. Icing will spill out around the sides, but you will be scraping it onto the sides of the cake anyway!
🎂 Use an icing scraper (or two) to line your disks up with each other
🎂 Put icing along the top edge of the cake, swiping up into the top disk, this will help lock the top disk in place
🎂 Press buttercream onto the rest of the sides of the cake with an offset spatula
🎂 Use very light pressure to scrape the excess buttercream off of the sides of the cake, fill in any holes and repeat
🎂 If you used parchment paper on your top disk, you will put a palette knife in between the parchment paper and the top disk to remove it. Here is where Juli had a bit of a mistake and removed the parchment paper with thetop disk.
🎂 Fill any holes in the top of your cake and smooth with an offset spatula, cleaning it after each pass
🎂 Remove the bottom disk by putting your palette knife or offset spatula between the cardboard cake board and the bottom disk
