4 small/medium chicken breasts

Cut a slit through the thickest part of each chicken breast. Season with the seasonings listed above or anything you like (salt, pepper, garlic powder, onion powder, paprika, touch of oregano works perfect). Stuff each chicken breast with the filling mixture listed below. Do not overstuff. Secure the edges with a couple toothpicks.
In a large preheated pan, sear the chicken breasts for a couple minutes on each side, until nicely browned. Then transfer the pan to the oven (if you don’t have an oven-safe pan, just transfer the chicken to a tray after it’s seared). Cook at 350 for another 10 minutes, then remove from the oven and rest for 5 minutes before serving.
Filling:
1/2 tbs butter
1/2 onion, diced
1 large garlic clove, minced
1 cup frozen chopped spinach
1/3rd block cream cheese
1/4 tsp salt
1/4 tsp black pepper
1 tbs grated Parmesan
2 tbs cottage cheese
Saute the onions and garlic in butter until softened, then add the frozen chopped spinach and saute until moisture has evaporated. Add it while still hot to a bowl with the cream cheese, as well as all the other ingredients and mix until well combined.
Spice mix:
1 tbs garam masala
1/2 tsp turmeric
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
2 tsp salt
1/4 tsp black pepper
1/4 tsp ground cinnamon
1/4 tsp red chilli powder (to taste)
Chicken:
1.5lbs chicken breast, cubed
1 tbs olive oil
Squeeze of lemon juice
2 tbs plain yogurt
1/2 tbs grated ginger
1 tbs crushed garlic
3/4 of the spice mix
Mix well, cover, marinate min 30 mins.
Sear in olive oil in 2 batches until chicken is browned and crusted well. Does NOT need to be fully cooked at this stage. Could also broil in the oven instead.
Curry:
1 tbs butter
1 medium onion, finely diced
1 tbs crushed garlic
1/2 tbs grated ginger
1/4 of the spice mix
250ml tomato paste
1 cup chicken stock
1/4 cup chopped cilantro
1/2 cup whipping cream
Seared chicken
1 cup chic peas
Water/stock to thin it out
Salt to taste
1 tsp fenugreek leaves, crushed
Garnish:
Whipping cream
Chopped cilantro
In the same pan the chicken was cooked in on medium low heat, add the butter and diced onion. Sauté for a couple minutes until softened, then add the garlic, ginger, and 1/4 of the spice mix. Saute for a minute, then add the tomato paste and saute for 1-2 minutes. Add water to thin it out until you get a saucy consistency. Add chopped cilantro, whipping cream and mix it in. Add the seared chicken, and the chic peas, mix it in, thin out with more water or stock if it’s too thick. Cover with a lid and simmer on low heat for 15-20 minutes, stirring occasionally. Taste and adjust salt to taste. Garnish with cilantro and whipping cream, serve with white rice.
Serves 2:
Carne asada:
1lb flank steak, cubed
1 tbs olive oil
1/2 tbs low sodium soy sauce
1 tbs lime juice
1 tbs orange juice
2 garlic cloves, grated
1 tbs chopped cilantro
1 tbs diced onion
3/4 tsp salt
1/4 tsp black pepper
1 tsp cumin
1 tsp chilli powder
1 tsp oregano
Marinate for 30 minutes, then sear in a hot pan with olive oil until browned on all sides. Do not overcook.
**NOTE:
traditional method: you would increase the amounts of all the ingredients to create a wet marinade, leave the flank steak whole, marinade it, then drain off the excess marinade and grill or sear it in a pan until medium on the inside. Then slice it up and serve.
Baked potatoes:
2 medium russet potatoes, washed, dried
1/2 tbs olive oil
Salt
Black pepper
Place on parchment, stab with a fork or knife a few times. Rub with olive oil, salt and pepper. Bake at 400F for 1 hr or until skin is crispy, and a knife can be easily inserted into the potato.

1 tbs butter
4 garlic cloves, minced
1 small can tomato paste (156ml)
1 cup chicken broth
1 cup whipping cream
1/2 cup sliced sun dried tomatoes
2 cups baby spinach
1/3rd cup grated Parmesan cheese

Chicken:

1.5 tbs chicken breast, cubed bite-sized
1 tsp salt

Season the chicken and sear it in a little olive oil until fully cooked and browned. Set it aside. In the same pan on medium-low heat, add 1 tbs butter and the minced garlic. Sauté for 1 minute until fragrant, then add the tomato paste and cook for another minute. Add the spices, mix them in and then and the chicken broth. Mix it in, add the cream, spinach, cooked chicken and sun-dried tomatoes. Mix them all in really well. Once the spinach has wilted, add the Parmesan cheese and mix it in. Taste and adjust the salt to your liking. Then add the cooked pasta and mix it in really well. Let it simmer for just a couple minutes to soak up the sauce. Then turn off the heat and serve.
This salad is not only packed with plant-based protein and fiber, but it also pairs amazingly well with literally any protein!! Steak and salmon so far have been a huge hit.
1 can (540ml) white kidney beans, rinsed
1 handful cilantro
1 handful parsley
1 handful basil
Few mint leaves
Zest of 1 lemon
Juice of 1 large lemon
1 tbs olive oil
1/4 red onion, sliced thinly
1/2 tsp salt (to taste)

1-2 cups coarsely chopped spinach (optional)
Place the beans on the stove in medium heat to heat through.
Very finely chop all the herbs, add them to a bowl. Add the lemon zest, lemon juice, olive oil, salt and pepper and mix. Add the thinly sliced red onion, mix. Optional: add the spinach. Add the hot beans and mix very well. Adjust salt and lemon to your liking. Let it sit for 3-4 minutes so the spinach softens, then mix again and serve.
