Ingredients:
• 2 lbs lean ground beef
• 2 tbsp olive oil
• 1 yellow onion, diced
• 2 carrots, diced
• 3 celery stalks, diced
• 3 garlic cloves, minced
• 2 tbsp tomato paste
• 1 tbsp all-purpose flour
• 1 cup dry red wine
• 2 cups beef broth
• Fresh thyme
• Salt & pepper to taste

For the mash:
• 500g cooked russet potatoes (bay leaf optional)
• 6 tbsp butter
• 2 egg yolks

Instructions:
1. Heat oil in a large pan. Brown the ground beef with salt and pepper. Set aside.
2. In the same pan, sauté onion, carrots, and celery for about 3 minutes.
3. Add garlic and cook for another minute.
4. Stir in tomato paste and cook for 2–3 more minutes.
5. Sprinkle flour over the mixture and combine well.
6. Pour in red wine, let it reduce slightly, then add broth, thyme, and beef.
7. Cover and bake in a 375°F (190°C) oven for 30 minutes.
8. While it bakes, mash the potatoes with butter and egg yolks until creamy.
9. Spread beef mixture into a baking dish, top with mashed potatoes, and create texture with a fork.
10. Bake at 425°F (220°C, fan on) for 20 minutes until golden.
11. Let it cool slightly, serve, and enjoy!

Ingredients
• Risotto rice (1.5 cups)
• Mushrooms (sliced)
• Shallot (chopped)
• Garlic (minced)
• White wine (1 cup)
• Broth (3–4 cups)
• Butter
• Grated Parmesan
• Thyme
• Salt & pepper
• Scallops
• Olive oil

1. Start by prepping all the veggies — slice mushrooms, chop shallot, and mince garlic.
2. Sear scallops in a hot pan with a bit of oil or butter until golden. Set aside.
3. In the same pan, sauté mushrooms until golden and fragrant. Add shallot and garlic — cook until soft.
4. Stir in risotto rice and toast it for a minute. Add thyme. Pour in the white wine and let it reduce.
5. Now comes the cozy part — slowly add warm broth, one ladle at a time, stirring constantly until the rice is creamy and tender.
6. Finish with a generous knob of butter and a handful of grated Parmesan. Mix well and season to taste.
7. Top with those gorgeous seared scallops and caviar.

Tomato Soup. Full recipe below ⬇️

Ingredients
• 2 red peppers
• 5 tomatoes
• 1 cup cherry tomatoes
• 2 whole garlic
• fresh rosemary, thyme
• 3 shallots
• 3 cups chicken broth
• ¼ cup grated Parmesan
• Fresh basil
• Salt & pepper

For the toast:
• Bread slices
• Butter
• Cheese of your choice

1. Preheat the oven to 400°F (200°C).
2. Place tomatoes, cherry tomatoes, bell pepper, shallots, and garlic on a baking tray. Season with salt and pepper. Drizzle with olive oil and add rosemary and thyme.
3. Roast for 50-60 minutes 380F until soft and slightly caramelized.
4. Transfer the roasted vegetables to a pot, squeeze out the soft roasted garlic, and add chicken broth, parmesan and fresh basil. Cover and simmer for 10 minutes.
5. Blend the soup until smooth.
6. For the toast: Spread butter on bread, top with cheese, and toast until golden.
7. Serve hot, garnished with more basil, balsamic vinegar and black pepper.

- 3 cups cooked short-grain rice
- 1 ribeye steak
- 1 king oyster mushroom

- Chives (finely sliced)
- 2 tsp brown sugar
- 4 tbsp soy sauce
- 2 tbsp sake
- 2 tbsp mirin
- Pinch of bonito flakes
- Salt, to taste

1. Mix sugar, soy sauce, sake, mirin, and bonito flakes. Simmer, cool, and strain.
2. Season the steak with salt and pepper and fry to your liking. Rest for 10 minutes, then slice.
3. Slice the mushroom, score with a pattern, season with salt, and fry until golden.
4. Place rice in a bowl, top with sliced steak, chives, egg yolk, and mushroom. Drizzle with sauce.

Ingredients (2 servings):
- 2 burger buns
- 350g ground beef (4 patties)
- Cheddar cheese
- 8 strips bacon (chopped)
- 1 small onion (diced)
- 2 tbsp honey
- 1/4 cup brown sugar
- 1 pickled cucumber (sliced)

Sauce:
- 2 tbsp mayo
- 1 tbsp mustard
- 2 tbsp ketchup
- 2 tbsp sweet relish

1. Fry chopped bacon over medium heat until crispy. Add diced onions and cook until soft. Stir in brown sugar and honey, then cook for 5-10 minutes until thickened. Season with black pepper.
2. Season with salt and pepper. Fry in a hot pan for about 1:30 minutes per side, pressing down. Add 2 slices of cheese on each patty.
3. Butter and toast a bun until golden.
4. Assemble:
- Bottom bun with sauce
- First patty with cheese

- Pickled cucumber

Carbonara. The full recipe below:⬇️

Ingredients (3-4 servings):
• 175g guanciale (or pancetta)
• 120g of Pecorino Romano cheese
• 4 egg yolks + 1 whole egg
• 5g black pepper
• 250g spaghetti
• Salt (for pasta water)

Instructions:
1. Cut the guanciale (or pancetta) into small pieces. Cook in a cold pan over medium heat until crispy and golden. Remove from heat and set aside, keeping some of the fat.
2. Finely grate Pecorino Romano.
3. Toast black pepper in a pan for 2-3 minutes, then crush it to release the flavor.
4. In a bowl, mix the grated cheese, egg yolks and 1 whole egg, black pepper, and a little of the cooked fat. Mix until smooth.
5. Boil spaghetti in salted water until al dente. Save a cup of pasta water before draining.
6. Slowly add a bit of pasta water to the egg mixture to warm it up. Then, mix the pasta with the sauce, stirring quickly to create a creamy texture.
7. Final touch: Add the crispy guanciale, mix well, and serve with extra cheese, and black pepper on top.

- 30 ml of Soy Sauce
- 250 ml of heavy Cream
- Fresh parsley, chopped

- Fried mushrooms
- Olive oil

1. In a pot, heat some olive oil over medium heat and sauté the minced garlic until fragrant.
2. Add the chopped onion and cook until soft.
3. Add sliced mushrooms and cook until the water evaporates.
4. Season with salt and pepper to taste.
5. Sprinkle in the flour and mix well.
6. Gradually add the broth, stirring continuously.
7. Pour in the soy sauce and bring the mixture to a simmer, add chopped fresh parsley.
8. Add the cream and continue to cook for 30-40 minutes, allowing excess liquid to evaporate until you achieve a creamy texture.

Christmas Beef Wellington recipe🎄Impress your family with this incredible meal. See the full recipe bellow:

Ingredients:
- Beef tenderloin
- Dijon mustard
- Shallots
- Mushrooms
- Garlic
- Thyme
- Rosemary
- 4 tbsp all-purpose flour
- 1 egg
- 140ml whole milk
- Butter
- Prosciutto
- Puff pastry

1. Take your beef and season it with sea salt. Wrap in plastic wrap and roll tightly. Chill in the fridge for 1 hour.

2. Sear the beef in a hot pan for about 45 seconds on each side. Brush with Dijon mustard, wrap in plastic wrap and roll tightly and chill again.

3. In the same pan, cook 2 diced shallots in butter for 2 minutes. Add chopped mushrooms and cook until the water is gone (about 45 minutes). Add 1 crushed garlic clove, some chopped thyme and rosemary. Cook for 5 minute, then set aside.

4. For the crepes, whisk together 3 tbsp flour, 1 egg, 140ml milk, 1/2 tsp salt and 2 tsp sugar. Cook with butter in a pan for about 1.5 minutes on each side.

5. On the plastic wrap put layer the crepes, prosciutto, and mushroom mix. Add the beef and roll it up tightly.

6. Place the puff pastry on a plastic wrap, place your rolled meat, brush the pastry with egg wash. Roll it up tightly and slightly brush with egg yolks.

5. Bake at 185C for 30-40 minutes until internal hits 55-60C. Rest it for 30 min before slicing.

The Beef Wellington is signature dish. A lot of work, only for the brave, but it’s worth it. Probably the most delicious dish we’ve ever cooked.
