1.5 oz Blue Nectar Reposado Tequila
.75 oz Raspberry-Hibiscus Mixer
.5 oz Lime juice
.25 oz Cointreau
4 drops Lime & Sea Salt bitters
3 Fresh Raspberries
Garnish: fresh raspberry, dehydrated lime, margarita cubes*
Rim a rocks glass with mixture of freeze dried raspberries & salt. Set aside. Combine all ingredients in a shaker with ice. Shake to chill. Double-strain into the prepared rocks glass. Serve with the margarita cubes.
*margarita cubes: Combine 1/4 cup lime juice, 1/4 cup tequila, 1 oz agave nectar, 3 grams agar-agar in a small saucepan. Bring to boil, whisking continuously. Reduce to a simmer & let simmer for 2-3 minutes, stirring occasionally. Pour into molds & let cool or put in the refrigerator.

CHAI PEAR-RITA
1 1/2 oz Blue Nectar Reposado Tequila
3/4 oz lime juice
3/4 oz chai-pear syrup*
1/2 oz orange liqueur
1/2 oz Spiced Pear Liqueur
Combine all ingredients in a shaker with ice. Shake to chill & strain into a coupe glass. Garnish with a pear fan & a star anise pod.
*Chai-pear syrup: In a small saucepan combine 1 cup water, 1 whole vanilla pod (split/scraped), 2 cinnamon sticks (broken in half), 3 star anise pods, 4 allspice berries, 6 cracked green cardamom pods, 1/2 tsp grains of paradise, 4 cloves and 1 chopped ripe pear. Bring to boil, reduce heat, simmer for 30 minutes. Remove from heat, & let steep for 1 hour. Add 3/4 c brown sugar & stir to dissolve. Strain, label & refrigerate.
