Mártir 🇨🇴

For years our industry has pushed coffee growers to produce ever higher quality, but somewhere along the way, beautiful, clean 86-point coffee seems to have been forgotten. Not complex enough for microlot quality. Too expensive for a blend component. However, these very coffees make up almost the entirety of a speciality producer’s harvest, which is why we decided early on that these would be the coffees that we built our business on: clean, sweet, balanced and endlessly drinkable. By putting these coffees at the centre of our business and in doing so aiming to increase demand, we hope to deepen our relationships with producers by ultimately returning to buy higher volumes each year.

Of the 12,672kg we sourced from the Mártir group this year, 96% was their ‘main harvest’ community lot - a ‘field blend’ of caturra, castillo, typica and variedad colombia. With sweetness reminding us of caramel and dates lifted by soft berry acidity, this is a coffee we could drink all day.

We work with one supply chain per origin and buy from the same producers every single year. No microlots from famous producers, no following the latest trends.

Why? Because the way we buy coffee is where our small business can have the biggest impact.

Firstly, this approach means that our producer partners benefit from the security of being able to rely on us to return each year, in theory enabling their business to grow alongside ours. Secondly, we benefit from having first access to consistently fantastic quality and, often, the exclusivity of these coffees.

Now in our sixth year of partnership, we are proud that our sourcing from Mártir has grown by 805% since 2020, increasing from 1,400 kg to 12,672 kg.

We are excited to have sourced eight lots in total from the group’s 2025 harvest. The group’s community lot currently makes up 40% of Blossom Espresso and is also available as a single origin offering on both our espresso and filter menus alongside their beautiful, clean decaf and group member Jeisson Fabian Ortiz’s exquisite pink bourbon.

1. Tell us a little about your business.

We opened Wylde in 2019, just before lockdown, over in Heswall. This was just after starting The Wild Coffee Club, a kind of blog/delivery service based around reconnecting with the outdoors through specialty coffee. Wylde was our first place and a real trial by fire on how to open a coffee shop from scratch with the 80 hour working weeks and all of the mistakes that come with it.

Lateral came in 2021 when an opportunity in West Kirby popped up, which was the place we always felt should be our second home. It was a larger space, with more potential for growth; we made another boatload of mistakes but a few less. Fast forward to now, it’s been a whirlwind of a few years but both stores are going from strength to strength as we continue the never ending learning process.

Our ethos is ‘Live Slow’, which is ironic considering the chaos of the first 5 years; but getting through covid, cost of living and just the general state of hospitality, requires regular reminders to enjoy the little things in life, and disconnect from all the noise.

2. What is your most memorable coffee experience?

JAMIE - Prior to opening Wylde, I lived in Edinburgh. There was (still is) a shop there called Fortitude. I’d always bottle ordering a V60, feeling a kind of imposter syndrome or like it was a burden on the barista. But one day I plucked up the courage when it was quiet, and sat in the window with this Colombian coffee. I can’t remember anything about it, but it tasted exactly like cola. The classic American cola, and it blew my mind how a coffee with little processing could imitate such a well known flavour so perfectly.

3. What does your morning coffee routine look like?

WARREN - It’s pretty simple, I roll out of bed, grind fresh beans on my Wilfa and brew an AeroPress. I tend to mix it up depending on what we’ve got in the stores at that time. I’ll have one religiously at home to start the day, but we’ve got 3 stores now, and it’s easy to end up five or six coffees deep without even realising.
Nemba Natural 🍓

If you drink our coffee regularly you’ll know that our preference is for clean, balanced profiles which is why so much of our sourcing is focused on washed coffee. That said, there are a few naturals that we can’t resist returning to each season.

The natural process red bourbon from Nemba Washing Station was the first lot that we sourced for Blossom in spring 2020, and every year we’re reminded of why we loved it so much in the first place - expect deep, jammy sweetness, vibrant acidity and layers of ripe tropical fruit.
To celebrate the upcoming our very own will be brewing a selection of our latest releases with and in Bangkok and in Surat Thani.

Seven years of Nemba ✨

When sourcing our opening range of coffees prior to launching our business back in early 2020, we came across coffee from Nemba Washing Station in northern Burundi for the first time. Intensely sweet and sparklingly clean, this was exactly the kind of coffee that we wanted to present. Six years on, we are proud to share the work of these smallholder producers for a seventh consecutive harvest.

The first of three lots sourced from Nemba this year, this washed red bourbon is refreshing and bright, with a profile reminding us of zesty citrus, black tea and sweet stone fruit.
In 2023, as part of our strategy to maximise our impact with producers by buying as much of their harvest as possible, we asked our friends at about the possibility of decaffeinating a portion of the Mártir group’s production. Fast forward to today and we are sharing Mártir’s beautiful decaf for a third season. This not only gives us access to impeccably clean, high quality decaf, but more importantly, we have been able to source an additional 3500kg from these producers this harvest.

Long term, relational sourcing over short term trends.

We recently visited Amy, Neesh and Vivian at The Old Fire Station, with words below by Mike Brown, the University of Salford’s Director of Strategic Partnerships.

The Old Fire Station was opened in August 2024 with the goal to “do something special” and provide tangible value to Salford: Our furniture was made less than a mile from The Old Fire Station, our crockery was produced by a local pottery, and when it came to coffee, we looked for a local roaster that shared our ethics and sustainability, but also, and importantly, produced great coffee and recognised the importance of partnership. We’re pleased to say we found this in Blossom Coffee Roasters.

The Old Fire Station is unique in that it’s owned and operated by The University of Salford and comprises an artisan bakery specialising in sourdough breads, amazing pastries and cakes, all baked fresh every day, a coffee shop and café serving sustainable and quality coffee and brunch menu, and, the University’s own micro-brewery. All focused on providing high-quality products with friendly customer service.

The University of Salford is a civic university and works in close partnership with the Salford community, perfectly summed up in the University’s Civic University Agreement: “to strengthen the relationship between the University and local communities, addressing local challenges and opportunities collaboratively. We aim to foster co-operation and shared responsibility for the common good, ensuring the university contributes to the economic, social, cultural, and environmental wellbeing of our city.”

We roast around 750kg of Blossom Espresso per week, making it comfortably our highest volume coffee. As such, it is when sourcing its components that we have the potential to make the greatest impact on our supply chains.

Though it would be easier to follow the common process of shopping around for cheap ‘filler’ coffees when building a blend, we prefer a more intentional approach: committing to return to the same few producers every season to buy as much of their coffee as possible. For us, this long term consistency of buying is where real ‘sustainability’ starts.

We have just made our first seasonal change of the year, pairing new harvest coffees from our two highest volume relationships: the Hofmann family and the Mártir group. Together, these coffees result in sweet, round and balanced everyday espresso.
