* 2-3 tbsp ghee
* Warm water, as needed
For the Potato Filling
* 2-3 medium boiled potatoes, mashed
* 1 tbsp oil
* ½ tsp cumin seeds (jeera)
* ½ tsp mustard seeds (rai)
* Salt to taste
* ¼ tsp turmeric powder
* 1 tsp red chilli powder
* 1 tsp roasted cumin powder
* 1 tsp dry mint (pudina) powder
Method
Prepare the Dough
1. In a large bowl, combine the wheat flour (or multigrain flour), besan, and suji.
2. Add salt, ajwain, red chilli powder, baking soda, crushed kasuri methi, and ghee.
3. Mix everything well until the mixture resembles breadcrumbs.
4. Gradually add warm water and knead into a firm yet smooth dough.
5. Cover and let it rest for 15-20 minutes.
Prepare the Filling
1. Heat oil in a pan.
2. Add Hing, red chilly, cumin seeds and mustard seeds, let them crackle.
3. Add the mashed boiled potatoes.
4. Mix in salt, turmeric, red chilli powder, roasted cumin powder, and dry mint powder.
5. Cook for 2-3 minutes until the spices are well combined.
6. Let the mixture cool slightly.
Shape the Mini Baatis
1. Divide the dough into small equal portions.
2. Flatten each portion into a small disc.
3. Place a spoonful of the potato filling in the center.
4. Seal the edges and roll gently into smooth balls.
Cook in the Appe Maker
1. Heat the appe maker on a low flame.
2. Lightly grease each cavity with ghee.
3. Place the stuffed baatis into the cavities.
4. Cover and cook on low heat for 15-20 minutes, turning them every few minutes to ensure even cooking.
5. Lightly brush each baati with a little ghee while cooking for a crisp, golden finish.
Serve with Mint Chutney.
